How To make Freezer Burritos
2 cn Black beans
2 3 cups of cooked rice (your
Favorite kind) 1 lg Onion
3 To 4 cloves garlic
x Dried basil, cumin, chili Powder, cayenne pepper 1 pk Flour tortillas, burrito
Size 1 sm Can tomato sauce
Saute onions and garlic in your favorite oil sub (I like to use balsamic vinegar or cooking sherry). When onion is soft, add spices (sorry no measurements, I just throw on what looks good), cook a couple of more minutes and remove from heat. In a large bowl, dump 1 can of beans with juice, drain the other can and then add the beans to the bowl. Add the can of tomato sauce. Mash the beans until most are mashed, but leave some unmashed. Add cooked rice and onion mixture. Stir well. Roll up burritos, freeze. These make good snacks, lunch or supper with a salad, and I love them for breakfast. Enjoy! Pressure cooke for 18 mins- Quick release
Thawed microwave 60 seconds
frozen microwave 2 to 3 minutes
Ingredients for Bistec Ranchero burritos/ Chimichangas
2.5 pounds of chuck roast (pot roast boneless)
1 to 20 flour tortillas
1 Tbsp olive oil
2 medium potatoes + 1 extra if needed
1 tomato
1 poblano pepper
4oz of tomato sauce
1 medium onion
2 garlic cloves
3/4 of a cup of warm water
1/2 Tbsp ground cumin
1/2 Tbsp Mexican oregano
1 tsp black pepper
1 tsp of salt or 1 1/2 Tbsp chicken bouillon (adjust to taste)
Small bunch of cilantro
1 Tbsp of AP Flour or corn start dissolved in cold water
Tortilla glue
Dissolve warm water into AP flour until you achieve a paste
*make extra if you want to add bistec ranchero to make a thicker stew/gravy

The Breakfast Burrito that CHANGED My Life | Meal Prep
This freezer-friendly breakfast burrito changed my life. Here's how you can make it, too....
⚪FULL RECIPE⚪
~ INGREDIENTS ~
- 6 Ultimate Tortillas (
- 1 lbs of 93/7% ground turkey
- 18 large grade A eggs, whisked
- 1 lbs (453g) whipped lowfat cottage cheese
- ½ bunch of kale (roughly 2 cups), chopped
+spices+
- 1 Tbsp (8 g) chili powder
- 1/2 tsp (2 g) paprika, smoked preferably
- 1 tsp (3 g) onion powder
- 1 tsp (3.5 g) garlic powder
- 1/2 Tbsp (4 g) cumin
- pinch (¼ tsp) oregano
- 1 tsp (2 g) black pepper
- 1 tsp (9g) salt (or to taste)
~ INSTRUCTIONS ~
- Brown and cook meat in pan with spices on medium-high heat
- Add the cottage cheese and mix well
- Add in the kale or other veg and cook down until starting to thicken
- Put meat in a bowl or on a plate to cool and thicken
- Lightly scramble eggs over medium-high heat until cooked and creamy
- Put into container to cool
- Portion out fillings into 6 Ultimate Tortillas and wrap
- Place burritos into a baking dish or onto a tray to let freeze overnight
- Put burritos into freezer-safe containers or ziplock bags and keep in freezer for up to three months
~ WARMING BURRITOS~
The best way to eat a breakfast burrito is to plan ahead the night before. Put one in the fridge before bed so that it has the chance to dethaw before you microwave it in the morning. Then Microwave for 2 minutes and let cool for 1-2 minutes before eating. Otherwise, place straight in microwave for 2 minutes, cut in half, and microwave for another 2 minutes.

Bacon
Sausage
Baby Red Potatoes /quartered
1 Red Pepper /chopped
1 Yellow Onion /chopped
Salt and Pepper
10 Eggs - beaten
1 Bag Shredded Cheese
1 Bunch Green Onions /sliced
Flour Tortillas
Parchment Paper
In a large skillet over medium heat, cook bacon (in batches if necessary) until crispy. Remove the bacon to a paper towel lined plate - leave to cool. In the same skillet - using leftover bacon grease (drain some if necessary) add the potatoes and season with salt and pepper. Once lightly browned add in peppers and onion. Cook until potatoes have browned and the peppers and onions have softened. Remove from pan and place in bowl to cool. In the same saucepan, cook sausage until browned and cooked through. Remove to a paper towel lined bowl. Finally, reduce heat to medium/low and pour beaten eggs into the skillet. Fold and stir eggs occasionally until cooked but still soft and moist. Remove from pan.
Gather cooked ingredients - having let them all cool slightly. Additionally gather flour tortillas, shredded cheese and sliced green onions (optional) and set them out on your table/workspace. To assemble the burritos, lay out a tortilla and start with a base of eggs followed by desired toppings and finish with cheese. To wrap, fold in both sides and then fold the bottom up and over all the ingredients. Roll up tightly. (If you find the tortillas are tearing, heat them up - a few at a time - for 20 seconds in the microwave before assembling). Wrap up in parchment paper and repeat with remaining tortillas and ingredients, customizing the burritos to your liking. Place the parchment-wrapped burritos in a 1 gallon freezer bag and place in the freezer to store for up to one month.
To reheat:
Remove the frozen burrito from the freezer. Unwrap from parchment paper and wrap the frozen burrito up in a damp paper towel. Place on a microwave safe plate and microwave for 3 minutes. Remove from microwave and rest for one minute before unwrapping. Remove the paper towel, serve with hot sauce, salsa, or sour cream! Enjoy!
