How To make French Doughnut Muffins
1 each large egg
beaten
1/2 cup 1% milk
1/3 cup margarine :
melted
1 1/2 cups unbleached flour + 2 tablespoons
3/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/3 cup margarine -- melted
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon vanilla extract
Preheat oven to 400. Lightly spray muffin tin.
Beat egg. Add 1/2 cup milk and 1/3 cup melted margarine. Combine flour, 3/4 cup sugar, baking powder, salt, and nutmeg. Blend well with egg mixture.
Fill greased muffin tins 1/2 full. Bake 15 minutes until browned.
Immediately remove muffins from pan and dip in remaining 1/3 cup margarine. Roll in cinnamon/sugar/vanilla mixture. Serve warm.

- 2 tablespoon butter
- 1/2 cup castor sugar (you don't use it all)

How to Make Donut Muffins | Quick Breakfast Idea
Quick and easy vegan donut muffins. What are donut muffins? they are baked muffins that taste a lot like donuts, with way less sugar and fat. They're good any time of day, but an awesome addition to brunch especially.
Full recipe:
*Ingredients*
1 cup of all purpose flour
1 tsp baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 cup brown sugar
1 tbsp flaxseed meal
1 cup dairy free milk. I used hemp milk
1/4 cup vegan butter
1. Preheat oven to 375 degrees F (190 degrees C). Oil pan or line with cupcake liners.
2. In a large bowl, mix dry ingredients and make a well in the center. In another bowl, and 1 tbsp flax seed meal and and 3 tbsp lukewarm water. Allow to sit for 5-10 minutes. Next add the wet ingredients and mix well. Pour into the well of ht dry ingredients and mix till you get a thick pancake batter texture.
3. Fill cupcake tins to 2/3 full.
4. Bake in the preheated oven for 15 to 18 minutes.
While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup of brown sugar with a 1tsp of ground cinnamon. Remove muffins from their cups, dip each muffin in the melted butter, and roll in the sugar-cinnamon mixture.

Super soft old fashioned doughnut muffins rolled in cinnamon sugar are baked not fried but taste just as delicious! Super easy to make using simple pantry ingredients. Try not to eat them all at once!

INGREDIENTS
FOR MUFFINS
▪︎ 100g flour
▪︎ 1/2 tsp baking powder
▪︎ Pinch salt
▪︎ 1 egg, room temperature
▪︎ 70g caster sugar
▪︎ 70g butter, melted
▪︎ 50g yogurt, room temperature
FOR TOPPING
▪︎ 1/4 cup caster sugar
▪︎ 1/2 tsp cinnamon
▪︎ 1/4 cup butter, melted
INSTRUCTIONS
1. Preheat the oven to 200° C & line a muffin pan with paper liners.
2. In a bowl beat yogurt & egg until well mixed.
3. Stir in flour, baking powder, salt, sugar & melted butter. Mix until just combined. Do not mix too much.
4. Divide the batter evenly among the prepared muffin cups.
5. Bake at 200° C for 5 minutes, then reduce the temperature to 180° C & bake for additional 15 to 17 minutes.
6. After the muffins are baked allow them to cool for 5 minutes before lifting out of the tin.
7. For topping mix caster sugar with cinnamon. Dip the muffins in melted butter then coat with the cinnamon sugar mixture.
8. Serve warm or room temperature. Enjoy!
