MASALA NUTS
Ingredients
½ cup peanuts ½ cup pistachios ½ cup almonds ½ cup cashewnuts 2 cups puffed lotus seeds (makhana) ¼ cup ghee 2 tsps black peppercorns, coarsely crushed 1½ tsps roasted cumin, coarsely crushed 1 tsp red chilli powder Salt to taste
Method
1. Heat ghee in a non-stick pan. Add peanuts, pistachios, almonds and cashewnuts. Sauté till the nuts are brown. Add makhana and sauté till they are crisp. Switch the heat off and transfer onto a plate. 2. Heat ghee in the same pan, add crushed black peppercorns, cumin and red chilli powder. Add the roasted mixture and mix till well combined. Add salt and take the pan off the heat. 3. Serve as required or store in an airtight container.

Healthy cocoa balls made with fruit and nuts
They taste so good, no one will believe these are actually healthy yet they are packed with goodness. These energy balls are loaded with fruits, nuts, natural sugars and healthy oils. Plus they are simple to make, just measure the ingredients, throw them in your food processor blitz, then roll in shredded coconut. This recipe makes 24, but as I keep picking at it I usually get around 20. Best to store them in the fridge, eat them cold or take them out 20 minutes before serving. They also make a great gift idea, wrap them up in cellophane with a tied ribbon or string, perfect for any occasion.
