Vegan Omelet/ Chickpea eggless omelet (gluten-free, nut-free)
Vegan Omelet Spanish style using chickpea flour? Is this even possible? Yes, it is! I am absolutely IN LOVE with this recipe, it is extremely versatile and highly nutritious due to all that lean clean protein chickpeas have!

Ingredients for vegan Omelet/ chickpea eggless omelet (gluten-free, nut-free):
2 1/2 cups of boiled cubed potatoes
1 cup of chickpea flour
1 cup of water
1/2 cup of red peppers
1/2 cup of onions
1/3 cup of frozen peas
2 cloves of garlic, minced
1 cup of spinach
1 TBSP of fresh parsley
1 tsp of oregano
1 tsp of salt
1/ tsp of black pepper
1 tsp of sweet paprika
1/2 Tsp of baking soda
2 tablespoons of vegan butter
DIRECTIONS:
- boil the potatoes until cooked but firm, let them cool completely
- in medium heat, add 1 tablespoon of the butter and saute the onions and red peppers to a skillet, cook until soft
- add the garlic and saute for 40-50 seconds more
- mix all the dry ingredients to a bowl, mix well
- add the water, mix it well
- add lemon juice, mix
- add the potatoes, mix carefully so they don't break
- in a frying pan, add 1 tbsp of vegan butter, heat then add the mixture
- cook it medium-low heat for 5 to 6 minutes each side, add more butter if needed
- It cannot be frozen.

VEGAN HIGH PROTEIN CHICKPEA BREAD⎜ NO OVEN⎜GLUTEN-FREE
This chickpea bread is an amazing alternative to your old everyday bread! You can make easily using only affordable ingredients that you probably already have in your pantry. Also, it is ready in no time because you don’t need to knead it, which is brilliant! Plus, it is gluten-free and has lots of proteins which makes this super bread perfect to be enjoyed in the mornings before starting your day!
NO OVEN GLUTEN-FREE CHICKPEA BREAD⎜VEGAN HIGH PROTEIN
INGREDIENTS:
1 1/2 cup of cooked and drained chickpea
Salt to taste
1/2 teaspoon of garlic powder
1 tablespoon of olive oil
1/4 cup of plant-based milk or water
1/4 cup (plus one tablespoon, if needed) of cornstarch
1 teaspoon of baking powder
2 tablespoons of lemon juice
Mixed seeds
CUPS MEASUREMENT:
1 CUP: 250 ml
1/2 CUP: 125 ml
1/3 CUP: 83 ml
1/4 CUP: 62 ml
METHOD:
Add the chickpeas to a blender along with the garlic powder, salt, olive oil, and milk, blend it for about two minutes.
Remove the blended chickpeas from the blender, add them to a bowl, add the remainder of the ingredients except for the seeds. Mix well until it's well incorporated and lump-free.
Cover it and let it rest for 15 minutes.
Grease an 18cm skillet, place a sheet of parchment paper on the bottom of the skillet, grease the pepper as well, and pour the chickpea batter, smooth the surface with the back of your spoon, and sprinkle some mixed seeds on top.
Cover it and put it on the stovetop at the lowest flame possible for 35 to 40 minutes. This time may vary. Alternatively, you can bake it in a preheated oven for 30 minutes at 180℃.
Flip your bread with the help of a plate, place it back in the skillet, this time upside down, cover again and let it cook for 5 to 7 minutes more.
Remove your bread from the stove, remove it from the skillet, place it on a cooling rack and wait until it reaches room temperature before slicing it.

- - Hace poco descubrí la Fainá, es una receta que me encanta, no la conocía y la verdad es que está muy buena!! También he visto que, en algunos países, se come junto a la pizza, se come una porción de pizza con una porción de fainá. Entonces se me ha ocurrido fusionar las dos cosas, una Pizza-Fainá, una Pizza Sin Gluten, ya que se hace con harina de garbanzo.

Garbanzo and Fava Flatbread Recipe
1 3/4 cups Garbanzo and Fava Bean Flour - I used Bob's Red Mill Garbanzo and Fava Gluten Free Flour
1 tsp baking powder
1 tsp Xantham Gum
1/2 tsp. Salt
1/2 Cup Water
1/3 Cup Olive Oil
3/4 Cup shredded Asiago cheese (I used Parmesan Cheese) (***SEE FOOTNOTE***)
1 Tbsp fresh thyme, finely chopped (I used Garlic Powder) (***SEE FOOTNOTE***)
Approx 1 Tbsp Coarse sea salt (***SEE FOOTNOTE***)
Directions:
Preheat oven with pizza stone to 450* for 30 minutes
Pour the garbanzo and fava flour into a medium-sized bowl and mix with the baking powder and salt.
Make a well in the center and pour in the olive oil and water.
Mix with a wooden spoon until it is well mixed and then knead onto a clean work surface 4 or 5 times. The dough should feel oily, but to keep it from sticking to the work surface, sprinkle extra garbanzo flour or a Starch on the rolling pin, dough and work surface.
Divide the dough into four pieces.
Roll the dough out into long, irregular shapes onto parchment paper. There's no need to be precise here just flatten out the dough to about 1/8″ thick.
Brush with extra olive oil and gently press the thyme (or Garlic) into the dough so it sticks into it. Stab several times with a fork and sprinkle lightly with sea salt and Asiago (or Parmesan) cheese. I baked mine on the Pizza Stone with the parchment paper. Bake for 5 minutes or until it's golden brown.
Cool on a wire rack.
I served them with Garlic Hummus. I have read some people like to drizzle Honey on it.

I have made this flat bread a dozen of times! I made a few adjustments:
I now use both Asiago and Parmesan Cheese..
After the first time I skipped adding the Sea Salt,,, I found it was to salty.
You can also play with the Seasoning! I like adding both the Thyme and Garlic. I have also added different seasonings. I like Tuscan Garlic Spice Mix.
Original recipe calls for: Drizzle lightly with honey and cut into pieces.
We prefer our Fava Flat Bread with a Garlic Hummus.
Cool completely before storing in a Ziplock Bag.
