How To make German Meatloaf
1/2 lb Ground Beef, Lean
1/2 lb Ground Pork, Lean
1 md Onion, Chopped
3 tb Bread Crumbs
3 tb Water, Cold
2 lg Eggs
1/2 ts Salt
1 ts Paprika
1 ts Mustard, Prepared
2 tb Parsley, Chopped
3 Hard Cooked Eggs, Peeled
4 Bacon, Strips
4 tb Vegetable Oil
1 c Beef Broth
SAUCE:
1/4 c Water, Hot
1 ts Cornstarch
1/4 c Water
1/2 c Sour Cream
Thoroughly mix ground meats, onion, bread crumbs, 3 T cold water, and eggs. Flavor with salt, praprika, mustard, and parsley. Blend ingredients thoroughly. Flatten out meat mixture in the shape of a square, (8 X 8-inches). Arrange whole hard-boiled eggs in a row along the middle of the
meat. Fold sides of meat pattie over the eggs. Shape meat carefully into a loaf resembling a flat bread loaf. Occasionally rinse hands in cold water to prevent sticking. Cube 2 strips bacon; cook in a Dutch oven about 2 minutes. Carefully add the vegetable oil; heat. Place meatloaf in the Dutch oven and cook until browned on all sides. Cut remaining bacon strips in half and arrange over the top of the meatloaf. Place uncovered Dutch oven in a preheated oven for about 45 minutes. While meat is baking, gradually pour hot beef broth over the top of the meatloaf; brush occasionally with pan drippings. When done remove meat to a preheated platter and keep it warm. Add 1/4 cup of hot water to pan and scrape all particles from the bottom. Bring to a gentle boil and add cornstarch that has been mixed with 1/4 cup water. Cook until bubbly and thick. Remove from heat and stir in sour cream. Reheat to warm. Season with salt and pepper if desired. Serve the sauce separately.

Beef Rouladen - Delicious Beef Rolls from Germany
Rouladen is a German dish made of beef that is rolled up with bacon, onion, and pickles inside. It is simple to make and only requires a few ingredients. I’ve given this recipe a slight French twist.
First, the beef is pounded thin and then seasoned with salt and pepper. Then spread meat with ½ tbsp Dijon mustard. I used Dijon, but traditionally you would use German mustard. Next, bacon or smoked ham, onion, and pickles are placed on top of the beef before it is rolled up and secured with toothpicks or kitchen twine. The Rouladen is then browned in a pan before being simmered in beef broth until tender.
This dish is typically served with potatoes and gravy. For a French twist, Rouladen can also be made with veal instead of beef. Being French, I like it served with mashed potatoes and green beans.
either way, Rouladen is a delicious and easy-to-make meal that is sure to please any crowd.

Falscher Hase - The German Meatloaf You Need to Try!
v v v v v v v v v v
Ingredients:
500g mixed pork and beef mince
1/2 large onion, chopped into medium-sized chunks
60g bacon bits
1 stale German breadroll
1 bunch of parsley, finely chopped
1 tablespoon spicy mustard
Salt and pepper, to taste
1 egg
3 hard-boiled eggs
Instructions:
Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
Start by preparing the breadroll. Dunk the roll in a bowl of water and let it soak for a minute or two. Once the bread is fully soaked, gently squeeze out the excess water and set it aside.
In a large mixing bowl, combine the mixed pork and beef mince, chopped onion, bacon bits, parsley, mustard, salt, pepper, and egg. Mix everything together until fully combined.
Take the breadroll and tear it into small pieces. Add it to the mixing bowl and use your hands to knead everything together until the mixture comes together and feels slightly greasy.
Take half of the meat mixture and shape it into an oblong shape on the prepared baking sheet. Arrange the hard-boiled eggs in a straight line down the center of the meat, leaving some space between them.
Cover the eggs with the remaining meat mixture, making sure to press it down firmly to eliminate any air pockets.
Place the meatloaf in the preheated oven and bake for 45 minutes, or until fully cooked and browned on the outside.
Remove from the oven and let the meatloaf cool for a few minutes. Cut it into thick slices and serve with your favorite sides, such as potatoes and peas.
Enjoy your homemade Falscher Hase, a German classic that's both delicious and easy to make!
