Delicious fish cakes made with cod filet. So easy and delicious. This is a traditional Danish recipe and it is to die for!

Ingredients (for 4 persons):
600 gr / 1.3 pounds cod filet
1 tsp cooking salt
2 eggs
2 tbsp flour
150 ml / 5 oz full fat cream
1 carrot
1 russet potato
2 tbsp chopped dill
freshly grounded pepper
15 gr / 1 large tbsp butter
1/2 tbsp canola oil

Cod recipe from the Golden Lamb, recently recognized by 'Food and Wine'
CINCINNATI (WKRC) - The historic Golden Lamb restaurant in Lebanon was recently recognized as an American classic in Food and Wine magazine. The restaurant's general manager Bill Kilimnik and chef Nick made a cod recipe for the Monday Menu, or in this case also the Friday menu during Lent.
Baccala (Salt Cod) with Potatoes, Capers, and Olives
Baccala (salt cod) is traditionally served as one of the recipes in The Feast of the Seven Fishes. In this episode I'll show you how to make fried salt cod balls (fritters) and how to make it Neapolitan style with potatoes, capers, and Gaeta olives in a delicious puttanesca like sauce. If you want to make this recipe be sure to purchase the baccala at least 3 days prior. It needs to be soaked in water for 2-3 days before making it to remove the salt. I show you how to do this and make the two recipes in this video. Enjoy!

BACCALA ALLA NAPOLETANA PRINT RECIPE:
BACCALA BALLS (SALT COD FRITTERS)
INGREDIENTS
- 1 pound baccala (dried salt cod) - soaked in water for 2-3 days with water changes 12 hours apart until not too salty
- ½ cup fresh parsley - minced
- 1 1/2 cups milk
- 1 pound potatoes -peeled and cut in half- Yukon Gold work well
- 3 cloves garlic - minced
- 1 medium onion - minced
- 2 large eggs
- 1 teaspoon kosher salt - taste a piece of cod to determine if any salt is needed.
- 1 teaspoon black pepper - or more to taste
- vegetable oil - for frying
- lemon wedges - for serving
INSTRUCTIONS
1. Rinse the salt cod and place in a large pot with the milk and enough water to cover. Cook at a simmer for 15-20 minutes.
2. Drain the cod and remove any bones and skin pieces. When cool enough to handle shred the cod into small pieces.
3. Boil potatoes until fork tender.
4. Mash the potatoes and mix with the cod, eggs, parsley, onion, garlic, and pepper to form the batter.
5. Prepare a deep heavy pot for frying with vegetable oil.
6. To make the salt cod balls take a tablespoon of the batter and and with oiled hands form a ball.
7. Once the oil hits 370f begin frying the cod balls for 4-5 minutes or until golden brown on all sides. Taste test one and if they need a bit of salt add it right when the batches come out of the oil. Serve with lemon wedges. Enjoy!

It’s got a crazy-crunchy exterior, and the interior turns out flaky and tender every time. Opting out of frying your fish in a vat of oil does NOT have to mean eating bland and bare fish. We are here to tell you that you can have the best of both worlds; delicious flavor AND less grease.

This breaded fish is 10 times better than anything you could get out of a box, and it barely takes any more time. The dredge is the easiest ever, and the breading crisps up perfectly in the oven. My kids love it, I love it, and now you can love it too!
How to make Baked Fish:
Preheat your oven to 375°F and prepare a rimmed baking sheet by placing an oven-safe cooling rack on top of it.
Grab your cod fillets and give them a good pat with paper towels to remove any excess moisture before placing them on your work surface.
Now you’re going to grab two bowls. In the first, whisk up mayo, egg yolks, lemon zest, salt, and pepper.
In the second bowl, combine panko bread crumbs, salt, pepper, and chopped parsley. Once those ingredients are all well incorporated you can slowly stream in the melted butter and mix until everything is evenly moistened.
Now, take your fish fillets and gently dip each one into the mayo mixture and then right into the breadcrumb mixture, being sure to get them thoroughly coated on all sides before transferring them to the prepared baking sheet.
Once, all the fillets are ready to go, bake them for 18-20 minutes (or until cooked through), allow them to cool for a few, serve them up, and enjoy!

Easy Coriander Lime Cod Bake, One Pan Meal Ready in 25 Mins!
This easy cod bake is a simple fish dish, bursting with flavours of coriander, lime, garlic and chilli. It's all made in one pan and baked in the oven.
Brilliant for a quick, hands-off dinner. It works great with any chunky white fish and salmon too!

Ingredients:
▢4 skinless cod fillets - (about 600g or 1.3lbs altogether)
▢¼ tsp salt
▢¼ tsp black pepper
▢¼ tsp ground coriander
▢¼ tsp smoked paprika
▢1 tsp mixed black and white sesame seeds
▢½ tsp chilli flakes
▢1 lime - sliced
▢2 tbsp olive oil
Coriander Lime Paste:
▢50 g (1 ¼ packed cups) fresh coriander (cilantro) - roughly torn or chopped
▢3 cloves minced garlic
▢1 tbsp olive oil
▢Juice of 1 lime - (about 2 tbsp)
To Serve:
▢Small bunch of fresh coriander (cilantro)
INSTRUCTIONS:
1. Preheat the oven to 220C/425f
2. Place the cod fillets in a baking dish.
3. Mix together the salt, pepper, ground coriander, paprika, sesame seeds and chilli flakes and put to one side. This is your dry mixture.
4. Make the coriander lime paste by placing the coriander, garlic, olive oil and lime juice in a mini food processor and pulse until fairly finely chopped. Alternatively, you can finely chop the coriander, and mix it with the other sauce ingredients.
5. Spread the coriander lime paste on and around the cod fillets.
6. Sprinkle the dry mixture over the cod fillets.
7. Arrange slices of lime around the cod.
8. Drizzle on the remaining 2 tbsp of olive oil.
9. Place in the oven for 14-16 minutes, until the cod is golden and cooked through.
10. Serve topped with fresh coriander.
