1 kg of chuck roast
5 shallot
2 pieces of garlic
100ml of red wine
2 tbsp Balsamicvinegar
3 bay leaves
300 ml beef bouillion
250 tomato cubes
2 tbsp tomato paste
2 tsp oregano
1 tsp cinnamon
1 tbsp sugar
salt and black pepper for seasoning
step 1
cut the meat in cubes.
step 2
cut the shallot and the garlic
step 3
put oil in the pan and sauted the meat and dont forget to seasoning with salt and black pepper
and add the garlic as well or use garlic oil
step 4
add all herbs red wine and the rest of all the ingredients..
step 5
just cook on lowmedium heat for 3 hours till all flavours are mixed.and the meat is tender as well..

Here I use a pan to prepare meat and onions and traditional stove top for the cooking. Cooking time is at least 3 hours, unless you use pressure cooker. Stifado is traditionally made with rabbit.

1 1/2 Tbsp (30ml) - Olive Oil
1.5kg (3.3lbs) - Beef Chuck, Large Diced
2 - Brown (Yellow) Onions, Large Diced
6 - Shallots, Halved & Peeled (Substitute With Onion)
4 - Garlic Cloves, Roughly Chopped
2 tsp (5g) - Ground Cumin
130g (4.5oz) - Concentrated Tomato Paste
160ml (160g) - Red Wine (See Alcohol Notes Below)
60ml (1/4 Cup) - Red Wine Vinegar
550ml (550g) - Chicken or Beef Stock or Water
2 - Cinnamon Sticks
10 - Whole Cloves
4 - Dried Bay Leaves
7g (0.25oz) - Fresh Oregano
90g (3.1oz) - Dried Currants (Optional)
Seasoning To Taste
Recipe Notes -
If you can't consume alcohol, substitute the red wine for beef or chicken stock.
If you wish to not use fresh oregano, dried can be used instead. Use 1 1/2 tsp (1.5g).
Dried Currants are optional.
Shallots can be substituted with regular brown (yellow) onions. Use 2 extra onions.
