How To make Greek Burgers
1 lb Extra-lean ground beef;
1 cl Garlic; minced
2 tb Fresh lemon juice;
1 ts Dried oregano leaves;
1/4 ts Ground cumin;
1/4 ts Ground pepper;
1 md Size plum tomato;
2 tb Flat-leaf parsley; minced
4 6" whole-wheat pita pocket;
-breads; Romaine lettuce lea; 1 sm Red onion;
Mix ground beef, garlic; lemon juice, oregano leaves; cumin, pepper, plum tomato, and parsley. Form into 4 patties about 3/4" thick. Grill or broil, 4" from souce of heat, ofr 3 minutes, for 3 minutes on each side for medium-rare. Cut the top thrie off each of four 6" whole-wheat pita pocket breads. Turn the cut-off piece round side down; tuck inside to pocket bread to reinforce bottom. Place a grilled burger in each pocket bread along with a romaine lettuce leaf and paper-thin slices from 1 sm red onion. Pass 1/4 cup Cilantro Chutney (page 218) to spoon into burgers. Note: These hamburgers could be made with lean ground lamb. This simple Greek burgers recipe are known as biftekia, they may be grilled or cooked in a pan. The meat is mixed with a variety of herbs mostly, and they contain a bit of vinegarand breadcrumbs,oregano the result is a very tasty piece of meat.
ingredients:
600 gr.ground beef
2 tablespoon olive oil
1 tablespoon vinegar
1 tablespoon oregano
3-4 tablespoons moist bread crumbs
salt/fresh black ground pepper

I used...
Ingredients
1 pound ground beef
½ cup fresh spinach leaves chopped
⅓ cup sun-dried tomatoes chopped (DID NOT USE)
1/4 cup red onion minced
¼ cup feta cheese crumbled
2 cloves garlic pressed or minced
1 egg whisked
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon salt and pepper
hamburger buns
Fresh spinach leaves
Sliced red oinon
tomato
sliced cucumber
For the mayo
3/4 cup mayo
1/2 teaspoon garlic powder
1 teaspoon red wine vinegar
1 tablespoon dry dill
salt and pepper
Instructions
In a large bowl, add the ground beef, spinach, sun-dried tomatoes, red onion and feta. In a small bowl, whisk together the garlic, egg, olive oil, dried oregano, paprika, and kosher salt and pepper then pour over the beef and mix with your hands to combine. Divide the burgers . Place on a cutting board or plate dividing the patties with parchment paper and refrigerated for 30 minutes up to overnight.
(*note..You could also individually freeze the patties at this point for up to 3 months.)
To make the mayo mix all of the ingredients together...
Cook burgers in a skillet over med. heat. Avoid high heat because the outside will burn too quickly.
Add topping & enjoy
