Shrimp & Grits (2 servings)
Ingredients-
For the grits (I follow my package instructions; check that yours aligns)
1/2 cup stone ground grits
1 & 1/2 cup chicken stock
1 tbsp butter
1/4 tsp salt
1/2 cup milk
1/2 cup shredded cheddar cheese
For the shrimp
8 - 12 oz shrimp
2 - 4 slices bacon
1/2 bell pepper, diced
1/2 small white onion, diced
1/2 cup chicken stock
1/4 cup green onions, diced
1/2 tsp each of:
Garlic Powder
Onion Powder
Paprika
Chili Lime or Chili Powder
Garlic Salt
Pepper
Steps:
For the grits (I follow my package instructions; check that yours aligns)
1. In a medium pot, add in chicken stock, butter and salt; bring to boil
2. Gradually add in grits and stir to combine
3. Reduce heat to low, cover, and cook for 15 - 20 minutes until the liquid has been absorbed; be sure to stir every couple minutes
4. Once time is up, add milk and slightly increase heat to medium low; again, stir every couple minutes until liquid is absorbed
5. Remove from heat and stir in cheese
For the shrimp mixture
1. In a medium pan, fry bacon at medium heat until crispy (I like to cover mine to avoid splatter)
2. Remove bacon and set aside; reserve ~1 tbsp. of grease for cooking (be sure to let pan cool for a minute or two off burner as the bacon grease will be very hot)
3. Add in diced white onion and bell pepper; cook for about 5 - 7 minutes until soft and set aside
4. Season shrimp with all seasonings listed and add to pan
5. Cook shrimp for about 4 - 5 minutes flipping halfway
6. Add peppers back into pan with chicken stock and let simmer until grits are done (should be 2 - 5 minutes)
7. Arrange plate with grits layer, shrimp and stock mixture, and top with bacon and green onions
I start the cooking the grits first and once the broth is boiling, start cooking the bacon and everything should be finished around the same time!
