Make Perfect Quiche...Easy as Pie!
If you like a light, cheesy, velvety quiche, do I have a recipe for you! I have spent many years developing this recipe, which my family loves. I hope you like it too.
Bacon Cheese Quiche
1 9-10 pie shell, unbaked
5 cups cheese (I like 4 cups Swiss, 1 cup medium cheddar), grated
5 slices bacon, fried crisp and crumbled
2 teaspoons all purpose flour
2 eggs
1 12 ounce can evaporated milk
1 1/2 cups whole milk
1/4 teaspoon celery salt
1/4 teaspoon red pepper flakes (or ground white pepper)
1 tablespoon dried parsley flakes
1/2 teaspoon onion powder
1 teaspoon Worcestershire sauce
Preheat oven to 375 degrees.
In a medium size mixing bowl, combine cheese and bacon with flour. Place mixture in pie shell. In same mixing bowl, combine eggs, canned milk, whole milk and remaining ingredients. Whisk together to combine completely. Place pie plate on cookie sheet. Pour egg-milk mixture over cheese and bacon. Place quiche in 375 degree oven for 15 minutes. Cover crust edge to prevent burning. Reduce oven temperature to 350 degrees, and bake for at least another 45 minutes, or until a knife inserted into the center of the quiche comes out clean. The center of the quiche should 'jiggle', without being 'sloshy'. When done, remove quiche from oven to cool on rack. Slice and serve at room temperature. Cover leftovers tightly and store in refrigerator. Enjoy!

Ellen’s Breakfast and Brunch Recipes:
1 pound bulk pork sausage (regular, hot, maple, sage, or turkey sausage)
4 cups water
1/2 tsp kosher salt
1 cup uncooked quick cooking grits
1 1/2 cups shredded colby jack cheese (or any cheese), divided
2 tbsp unsalted butter
3 lightly beaten eggs
1/2 cup evaporated milk
Preheat Oven to 350 Degrees
Grease a 9x13 inch long baking pan with cooking spray or butter, set aside.
In a cast iron skillet or large pan over medium heat, add sausage and cook until brown about 7-9 minutes (stirring occasionally); drain the access grease and set aside.
In a large pot over high heat, add water and bring to a boil. After it comes to a boil, add salt and slowly add and whisk in the grits. Reduce the heat to low, cover and cook the grits for 5-7 minutes (whisking occasionally). Remove the grits from the heat and add in 1 cup of the cheese and the butter, stir or whisk until melted. Add and stir in the eggs, evaporated milk and cooked sausage until well incorporated. Pour grits mixture into the pan and sprinkle the remaining 1/2 cup of cheese right on top. Bake uncovered for 25-30 minutes or until center is set. Remove from the oven and cool on wire rack for 10 minutes. Serve and enjoy!

Mexican Style Quiche - Must Try Original Recipe!!
I'm super excited about this Mexican-Style Quiche recipe!! So I've definitely had a Mexican food craving lately, although I would eat it everyday if I could. Recently, I made White Chicken Chili and since then I've had roasted green chilis on my mind; they seem to be making their way into a few of my recipes. This recipe is no exception! I was originally planning on doing a traditional style quiche when suddenly the idea of a Mexican style quiche with green chilis popped into my mind. I was instantly drawn to the idea (not to mention my mouth started watering). So I came up with this wonderful Mexican style quiche recipe. Below you will find the ingredients as well as the directions on how to make this spicy twist on a traditional quiche. Thanks for watching! If you have any questions please feel free to ask.
Kitchen Tools Used:
Cuisinart Smart Stick Variable Speed Hand Blender:
Calphalon Signature Cookware Set:
Ingredients:
1 - frozen pie crust
3 - large eggs
2oz - diced green chilis
2 - heaping tablespoons flour
1/2 - tsp salt
1/4 - white onion chopped
1 - cup half and half
1.5 - cups Mexican style cheese
3 - tbsp green enchilada sauce
1 - diced roma tomato
optional chopped fresh cilantro, salsa, and sour cream for topping
Start by poking holes in frozen pie crust that has been properly thawed. Then place pie crust in an oven that has been preheated to 375° for 10-12 minutes until golden brown.
Sauté onions till translucent and then add green chilis and cook for several minutes.
Once pie crust is browned add a layer of cheese to the bottom of the crust and bake for several minutes to seal the bottom of the crust (this will keep the crust from getting soggy.)
Whisk eggs and half and half, then add sautéed onions and chilis.
Once the pie crust and cheese are done place half of the green enchilada sauce at the bottom of crust and then fill with the remainder of cheese holding back a small amount for topping. Then add half of the tomato.Pour egg mixture over the cheese and tomato. Then add the remainder of the tomato on top of the pie filling. Drizzle the rest of the green enchilada sauce on pie filling.
Bake for 35 minutes. Top with salt and let cool for 5-10 minutes.
Serve up and enjoy :)
