Filipino Chicken Adobo (incredible, EASY chicken thigh recipe!)
Filipino Chicken Adobo is the national dish of the Philippines and may well become your new favourite Asian chicken dish! Just a few everyday ingredients I can practically guarantee you already have, it's an effortless recipe that yields juicy, tender chicken coated in a sweet savoury glaze with little pops of heat from peppercorns.
This is a chicken thigh recipe and it MUST be made with thighs - no substituting with chicken breast!

Chicken kelaguen is chopped and prepared in lemon juice. It’s mainly served on the side as an appetizer, in a warm titiya (Guam’s sweet flour tortilla) and can be a main course as well. The pickling marinade and fresh ingredients give the chicken a unique taste. It’s fresh, tangy and spicy. Many cultures have similar recipes, with slightly different ingredients.
This is such an easy and crowd pleasing dish. I can tell you that my family and friends not from Guam, truly enjoy this recipe. It is often requested and made in no time. This teriyaki chicken filling for Guam food Filipino steamed buns pairs well with a soft siopao dough. Siopao is also known as manapua among other Pacific islanders like Hawaiians and Samoans. The siopao filling also holds up very well if you are planning to steam, freeze, thaw, and reheat your Guam chicken siopao.

INGREDIENTS
DOUGH -- 1 BATCH
Set 1
3 packages rapid rise yeast, also called instant yeast
1 1/4 cup warm water, between 105 to 110 degrees Fahrenheit
3 tablespoons vegetable or extra virgin olive oil (I prefer EVOO)
2/3 cups + 2 tablespoons granulated sugar
1 teaspoon salt
Set 2
3 1/2 cups all-purpose flour
Tools: large bowl, plastic wrap, wax paper, steamer
CHICKEN FILLING *using COOKED chicken; you will need 4 batches of dough for this filling
Set 1
8 cups cooked, shredded chicken
1 cup diced onions
1 cup Mr. Yoshida's sauce
2 tablespoons brown sugar
1 teaspoon garlic powder
1/2 teaspoon black pepper
1 tablespoon vegetable oil

Chagi | Chunky Chicken Chalakilis
Ingredients
•2 cups Rice, uncooked
•2 tablespoons Vegetable oil
•1 medium Onion, chopped
•1 tablespoon Garlic, chopped
•3 lbs. Boneless chicken, chopped
•½ teaspoon Black pepper
•13 cups Water
•1 packet Achote powder
•3 cubes Chicken bouillon
Directions
Pre-heat oven at 350°F.
Place uncooked rice on a baking sheet and toast in the oven for 7-8 minutes or until golden brown.*
In a pot, sauté onions and garlic in oil until onions become translucent. Mix in chicken and black pepper. Cook over medium heat until chicken is no longer pink.
Add rice, achote powder, and water to the pot. Stir and bring to a boil.
Add bouillon cubes to mixture.*
Stir occasionally until desired consistency.
Remove from heat and enjoy!
*Ground rice if preferred.
*Mash mixture while stirring if you choose not to grind rice.
Chicken Kådu | Chamorro Soup Recipe
Chicken Kådu is the Chamorro term for soup or broth. Think of it as Chamorro Comfort Food.
There isn't a particular occasion that Chicken Kådu is served. If made at home, Chicken Kådu is usually served as the main course. For your Kadu you can use chicken or beef.
Serve with steamed white rice.
Add Finadene and ENJOY!!!!

Chicken Kelaquen Recipe | Guamanian Style Food
This is a dish I had growing up in Guam and is simply killer. You can make it with other proteins but I have always used chicken.
Ingredients
About 9-10 boneless/skinless chicken thighs
1 coconut grated
about 10 chili peppers or 2 -3 habeneros
green onions
about 6 lemons juiced
salt to taste.
Fina Denne Sauce
2/3 cup soy sauce
1/2 cup vinegar
1/4 white onions, diced (green onions or red onions are optional)
4 peppers (donne'), dinache optional
