Ham Loaf | How to Use Leftover Ham
This Ham Loaf recipe comes from my husband’s grandmother, JoAnn, or “GG” as she is known by my kiddos. Ham Loaf is the perfect way to use up leftover Easter ham! This sweet and salty entrée is a mix of ground ham and pork with a sticky sweet pineapple glaze slathered all over top—an unexpected twist on traditional meatloaf. You can make this as a loaf or roll the mixture into meatballs. I hope you love this family recipe!
Ham Loaf 1 lb. ham, cubed 1 lb. ground pork 1 c. cornflake crumbs (I used about 2 ½ c. of cornflake cereal and ground them up in my food processor) ¾ c. milk 2 eggs ¼ c. brown sugar salt and pepper
Glaze 8 oz. crushed pineapple ¼ c. brown sugar
Preheat oven to 350 degrees. In a food processor, grind the ham into coarse crumbs. In a large mixing bowl, stir together the cornflake crumbs and milk. Add in the eggs, ham, pork, ¼ c. brown sugar, and a pinch of salt and pepper. Mix together with your hands until incorporated. In a small mixing bowl, stir together the crushed pineapple and ¼ c. brown sugar. Grease a 9x13 in glass baking dish or a 9x5 loaf pan and form the ham loaf. Spread the pineapple mixture evenly over top of the ham loaf. Bake at 350* for about an hour or until the internal temperature reaches 170 degrees. ENJOY!
