How To make Hamburger Spinach Casserole
10 oz Chopped spinach; frozen
8 oz Cream cheese (light or regular)
1/2 c Sour cream
3 tb Milk
3 tb Onion; minced
4 oz Wide noodles
1 lb Ground beef
15 oz Tomato sauce
2 ts Sugar
Garlic powder to taste Salt and pepper to taste Cheddar cheese; shredded * * enough shredded cheese to cover top of casserole Cook and drain spinach. Mix cream cheese, sour cream, milk and onion in separate bowl and let set to soften. Cook noodles in boiling water for 10 minutes. Drain. Brown beef and drain well. Add tomato sauce, sugar, garlic powder, salt, pepper and noodles. Heat through. In 2 quart casserole, place a layer of the meat-noodle mixture (use 1/2). Top with 1/2 of the cream cheese mixture. Top with all of spinach and finish with remainder of meat-noodles. Cover and bake at 350 for 40 minutes. Remove from oven and top with remaining
cream cheese mixture. Cover completely with cheddar. Return to oven UNcovered until cheese melts completely (about 5-10 min.) Serves 4.

Ingredients
1 lb hamburger meat
2 tsp Parmesan cheese
1 head of cauliflower
2 tsp Italian
2 tsp garlic powder
Salt and pepper
1 bundle green onions
Sliced pepper jack cheese
Shredded mozzarella cheese
11/2 bell pepper
1 container whipped cream cheese
1/4 cup sour cream
1 can diced tomatoes
1/2 package fresh spinach
Directions
Cut up cauliflower in small chunks. Add 1 tsp of all seasonings. Add whipped cream cheese. Mix together. You can add olive oil to the bottom of the dish or use non stick Reynolds wrap. Bake 30 minutes at 350°. While cauliflower is baking, cook hamburger meat, green onion, diced tomatoes,1 tsp of all seasonings. Drain hamburger meat when done. Add hamburger meat mixture to cauliflower mixture. Layer meat and cauliflower and cheeses in 9X13 dish. Bake uncovered for about 30-35 minutes until golden brown.

2.5 pounds ground beef
1/4 cup diced onion
1/2 teaspoon minced garlic
6-8 ounces cream cheese sliced
1/4 cup ketchup
1 1/2 tablespoons yellow mustard
1 teaspoon salt
1 teaspoon black pepper
8 ounces cheddar cheese
½ cup of radish thinly sliced
Sauce:
3 tablespoons mayonnaise
1 tablespoon yellow mustard
2 teaspoons pickle juice
For topping: shredded lettuce tomato, pickles, bacon
Directions
Preheat the oven to 350 degrees.
Heat a skillet to medium-high heat.
Add ground beef, radish, onion, and garlic, and cook until the ground beef starts to brown.
Stir in cream cheese and continue to cook until the meat is browned and the cream cheese melts.
Stir in, ketchup, mustard, salt, and pepper.
Transfer to a casserole dish and top with cheese.
Bake for 30 minutes.
In a bowl, stir together mayonnaise, yellow mustard, and pickle juice.
Remove the casserole from the oven and drizzle with the sauce.

I love creating new casserole dishes. Besides having to chop up your vegetables, this is an easy one pan keto dinner and is very filling!
I made this with a ground beef base with vegetables and seasonings that pair just right and some beef broth to bring all the ingredients together. Of course, I topped it off the best way I know how – with mozzarella cheese and let it bake in the oven until the cheese was just melted!
