How To make Hawaiian Brittle
1/2 c Dried banana slices
1/2 c Coconut
1 c Sugar
1/2 c Light corn syrup
1 Jar macadamia nuts
. (3 1/2-oz.) 1 ts Margarine or butter
1 ts Vanilla
1 ts Baking soda
*** MICROWAVE DIRECTIONS: Butter cookie sheet. Sprinkle banana slices and coconut in 12-inch circle on buttered cookie sheet. In 1 1/2 quart microwave-safe casserole or 8-cup measuring cup, combine sugar and corn syrup. Microwave on HIGH for 4 minutes. Stir in macadamia nuts. Microwave on HIGH for 4 to 6 minutes or until golden brown. Stir in margarine and vanilla; blend well. Microwave on HIGH for I minute. Add haking soda and stir gently until light and foamy. Quickly pour in thin stream over bananas and coconut on cookie sheet. Let cool 30 minutes. Break into pieces. 30 (2-inch) pieces.

Bacon Peanut Brittle For Dad - with yoyomax12
Cook up a batch of bacon peanut brittle for Dad on Father's Day.
Candy making playlist:
1/2 cup (one stick or 125g) butter (plus a bit more for greasing of cookie sheet)
8-10 slices of bacon, cooked until crisp, drained and crumbled.
1 1/2 cup (330g) white sugar
1/2 cup (125ml) water
3/4 cup (190ml) white or dark corn syrup
1 1/2 cup (230g) mixed cocktail nuts (salted or unsalted, or just peanuts)
1 tsp (6g) salt
1 1/2 tsp(10g) baking soda
Line a large baking sheet with aluminum foil and grease with butter generously. I used a baking sheet covered with a silicone mat (no need to grease).
Place sugar, corn syrup and water in a medium sized saucepan over medium-high heat. Stir constantly until it boils and then allow to boil (without stirring) for 10-12 minutes, until the temperature reaches 260F (127C).
Remove from the heat and stir in nuts, butter and salt.
Return to heat and stir until a boil is reached, allow to boil unstirred for about 5 minutes, until temperature reaches 285 F (140C).
Remove from heat, stir in bacon and baking powder. Replace on heat and cook an additional minute stirring a few times until foaming action diminishes slightly and colour darkens a bit.
Pour onto the greased baking sheet, spreading out thinly and moving bacon with tongs if it is clumped up in one spot.
Allow to cool completely and break apart into small pieces.
Store in the refrigerator.

**NOTES I found my recipe to be quite dark in colour. I think I may have to test my candy thermometer as it seemed to be a bit overcooked.
