How To make Hazel Nut Cookies
1 lb Hazelnuts; shelled, skins on
1/4 lb Almonds; shelled, skins on
2 Eggs
1 Egg whites
1 lb Sugar

Grind nuts in blender or food processor until as fine as flour. Beat eggs and egg white together. Add sugar and eggs to ground nuts. Knead until no longer sticky. Form into ovals about 1 inch by 1/2 inch. Place separated on a slightly buttered cookie sheet. Let stand overnight. The next day, bake at 275 degrees for 30 minutes or until lightly browned. -----

*ESPRESSO HAZELNUT CHOCOLATE COOKIES RECIPE*
Ingredients:
- 125g (8 ½ tbsp) softened butter
- 100g (½ cup) soft brown sugar
- 100g (½ cup) caster sugar
- 2 large eggs
- 275g (2 cups) plain or '00' flour
- 1 rounded tsp of espresso powder (feel free to extract fully, or use 1 tbsp of granulated coffee mixed into boiling water instead)
- ½ tsp salt
- 200g (7 oz) whole-hazelnut milk or dark chocolate, chopped into chunks
Instructions:
1) In a large bowl, beat together the butter and sugars until just combined.
2) Add the eggs one at a time, beating thoroughly between each addition until well incorporated.
3) Mix flour, coffee, salt, and chocolate chunks into the bowl.
4) Place the bowl of dough in the fridge to chill for at least 1 hour (or anywhere up to 48 hours!). This allows them to hold their shape better and come out nice and thick and chewy.
5) Preheat your oven - 190°C / 170°C fan / 375°F / gas mark 5.
6) Line 2-3 baking trays with greaseproof paper.
7) Roll lumps of dough into round balls and place onto your prepared trays, you should get 14-20 balls of dough.
8) Bake on their trays for 12-15 minutes until they look dry on top. They may seem underdone but they will firm up as they cool!
9) Cool the cookies on their tray for 10 minutes before cooling completely on wire racks.
10) Enjoy!

The perfect Autumn cookie that is ideal for a quiet moment on a dark day with coffee. With hazenuts & dark chocolate, its exceptional but DONT skimp on the salt, it’s integral to balance the sweetness of the cookie.
You'll need:
US Ingredients:
1 & ½ sticks butter
¾ cups granulated sugar
½ cup light brown sugar
3 & ½ cups plain flour
1 tsp + 1 tbsp sea salt
½ tsp baking powder
½ tsp bread soda
2 large free range eggs, lightly beaten
⅔ cups roasted hazelnuts, roughly chopped
1 cup dark chocolate, roughly chopped
Metric Ingredients:
175g butter
150g granulated sugar
100g light brown sugar
425g plain flour
1 tsp + 1 tbsp sea salt
½ tsp baking powder
½ tsp bread soda
2 large free range eggs, lightly beaten
100g roasted hazelnuts, roughly chopped
200g dark chocolate, roughly chopped

Ingredients:
2 sticks unsalted butter softened (8 ounces) (225 grams)
1/3 cup sugar (70 grams)
2 cups hazelnuts(10 ounces) (280 grams)
2 cups all purpose flour (10 ounces)(280 grams)
2 tsp vanilla extract
1/2 tsp salt
1 cup confectioners sugar for coating
Directions:
Step#1- Roast the hazelnuts in the oven at 350 degrees Fahrenheit (180 degrees Celsius)until lightly golden. Remove and wrap in a kitchen towel. Rub so the skin peels off easily. In a food processor grind hazelnuts for about 15 seconds. Set aside.
Step#2- In a large bowl combine butter, sugar and vanilla. Using a hand held mixer cream until light and fluffy. Lower the speed, add flour and salt. Now the hazelnuts. Finish combining with a spatula. Step#3- Now you’ll have a soft dough. If the dough is very soft let it set in the fridge for 10 to 20 minutes.
Step#4- Using a tablespoon ice cream scooper roll a ball. Finish rolling between your palm as if you were rolling meatballs. Then move your hands front to back and if creating a roll. Now fold the tips forward creating a crescent.
Step#5- Bake on a cookie sheet covered with parchment paper on 350 degrees Fahrenheit (180 degrees Celsius) for 15 to 18 minutes until lightly golden.
Step#6- Let them cool but not completely.
Step#7- Roll in powder sugar and enjoy!!

You'll need (should yield 6-8 cookies):
250g plain flour
2.5 tbsp cornstarch/cornflour
Pinch salt
1/4 tsp baking soda
140g butter
1 medium egg
2 medium yolks
140g dark brown sugar (you can substitute for light brown)
60g white granulated sugar
1 cup/80g chopped and roasted hazelnuts (substitute with any nut of choice)
200g dark chocolate
25g milk chocolate
