1 lb Hazelnuts; shelled, skins on
1/4 lb Almonds; shelled, skins on
2 Eggs
1 Egg whites
1 lb Sugar

Grind nuts in blender or food processor until as fine as flour. Beat eggs and egg white together. Add sugar and eggs to ground nuts. Knead until no longer sticky. Form into ovals about 1 inch by 1/2 inch. Place separated on a slightly buttered cookie sheet. Let stand overnight. The next day, bake at 275 degrees for 30 minutes or until lightly browned. -----

Crunchy Hazelnut cookies recipe. Very tasty and better then any cookie from the supermarket.
I love all kind of cookies, but the deep, roated hazelnut flavour of these cookies are delicious. The dough is a basic cookie dough, so you can play with any flavour you want.
Ingredients:
250g softened unsalted butter (1 cup)
120g powder sugar (1 cup)
2 egg whites
2 egg yolks
1 pack vanilla sugar (8g)
2 tsp baking powder
150 g hazelnuts unsalted (1 cup)
450-470 g flour typo 00 (3 ½ -4 cups)
Method:
Mix the powder sugar with the soft butter into a smooth mass.
Add the vanilla sugar and the 2 egg yolks and mix again.
Use a sieve to add the flour and baking powder and knead until you have a nice cookie dough.
This is a basic dough that you can use for all kind of cookies.
In this recipe, I portioned the dough with an ice scoop, dip them in the egg white and decorate it with coarsely chopped hazelnuts. You can use all kinds of nuts, seeds and oats.
Bake them 15-20 minutes at 170C (340F)
5 minutes drying with the oven door open.
Cool the cookies on a rack and safe them in a cookie jar, they keep at least for one week, but probably you will eat them in a day.

The wonderful biscuits are crunchy and very light. Finely ground hazelnuts are incorporated into a biscuit dough giving it such a light texture. So the biscuits have a lovely crunch and that perfect roasted hazelnut flavour with an additional nut on the top. These are such a great treat with tea or coffee.

Hazelnut Cookies! Our new favourite homemade cookie recipe! Hazelnuts, Filberts, Cobnuts, doesn't matter what you call them; they are great in these cookies. There's more to hazelnuts than just Nutella...
Ingredients:
6 ounces (170g) hazelnuts
2 Tbsp (30 mL) vegetable oil
6 Tbsp (85g) butter, room temperature
½ cup (100g) Demerara sugar, packed
⅓ cup (75g) granulated sugar
1 large egg
½ tsp (2 mL) vanilla extract
1 cup (155g) flour
½ tsp (2 mL) baking soda
Pinch of salt

Method:
Preheat oven to 350ºF (180ºC).
Toast the hazelnuts on a baking sheet in the oven for 5 minutes.
Grind the hazelnuts in a food processor coarsely.
Set aside about a 1/4 cup of the ground hazelnuts.
Grind the remaining nuts fine and add the oil, continue until the mixture turns into a hazelnut butter.
Mix the flour the baking soda and the salt.
In a stand mixer cream the butter and sugars together until light and fluffy.
Beat in the hazelnut butter, egg and vanilla; mix thoroughly.
Slowly spoon in the flour mixture while mixing.
Mix in the reserved hazelnuts.
Scoop the dough in small amounts and form into balls.
Arrange them 2” apart on baking sheets lined with parchment paper.
Flatten the balls with the tines of a fork.
Bake for 8-to-9 minutes or until the cookies are golden.
Cool on racks.
The cookies will keep for about a week in a sealed jar.

You'll need (should yield 6-8 cookies):
250g plain flour
2.5 tbsp cornstarch/cornflour
Pinch salt
1/4 tsp baking soda
140g butter
1 medium egg
2 medium yolks
140g dark brown sugar (you can substitute for light brown)
60g white granulated sugar
1 cup/80g chopped and roasted hazelnuts (substitute with any nut of choice)
200g dark chocolate
25g milk chocolate
