???? COW TONGUE CARPACCIO: Brine the cow tongue for seven days. Chop carrots, celery and onions and add to a big pot. Pour in chicken stock and bring to a simmer. Add cow tongue and allow to simmer for 3 hours. Remove and peel membrane. Refrigerate for at least 24 hours to make it firm. Remove and slice. | Assembly: on a plate, lay down tongue. Add a haresa emulsion. Add caper pepper salsa (mixture of caper, peppers). Add onions, fried garlic, marion salt and fresh herbs.
???? CRISPY PIG HEAD CARNITAS: Remove the hair with a torch. Remove the glands. Place the pig face in the steamer and allow it to steam for 12 hours at 180F. Prick the pig head. Spray the snout and ear with cooking spray and wrap with tin foil. Place in the oven. Roast for 3 hours. | Assembly: Place on a wood cutting board and serve with a side of green and red salsa, pickled onion and tortillas

Head Cheese Revisited
This recipe is popular all over Europe and Latin America. Known by many different names, it’s all good. This is my mom’s recipe that she learned from her mom and grandmother back in the old country~ Poland. All meaty goodness, this dish is a holiday favorite. It freezes well, so you can make extra and put in the freezer. This is my twist on her classic recipe adding Tango Spice's Tango Verde seasoning. It complements the pork and other spices in the recipe and makes this a wonderful variation. Definitely a first class holiday treat! Ingredients Follow:
3 Pig Trotters, sliced in half lengthwise
3 LBS Pork Chops
1 LB Pork Bone, or neckbones (You can add ham hocks too)
1 C Red Bell Pepper
1 C Green Onion
1 C Parsley
1/2 Jar ( 2 oz) Tango Verde Spice Seasoning
6 Cloves Garlic
5 Bay Leaves
2 TBSP Crushed Red Pepper Flakes
1 TBSP Salt
1 TSP Black Pepper
Water

HOG HEAD CHEESE
HOG HEAD CHEESE
An easy to make recipe for making hog head cheese.
No head of a hog is used in this recipe.
This is excellent served with crackers or a sandwich.
Toward the end is the most important part of this recipe to get the seasoning right as well
as the consistency. When it cools it looses some spiciness and saltiness. Next time I will probably double the seasoning and add a bit of cayenne.
Probably adjusted to 1 tsp salt and 2 TBS of Cajun seasoning and 1 tsp cayenne.
Mom and my brother both tried it and said it was perfect so unsure now if I'd change anything.
The ingredients:
4 LBS cut up pork roast
2 LBS pigs feet
1 diced onion
2 TBS parsley
1 TBS minced garlic
1 TBS Cajun Seasoning
1/2 C green onion tops (small rings)
4 C water
Add all the above ingredients to a large pot and boil for 1 hr and 40 minutes or until the pork meat is tender.
Add water as necessary. I ended up adding 8 additional cups.
Remove the pigs feet and set aside. This can be used to make pickled pigs feet or simply discarded.
Remove the pork meat and set aside.
Remove the gravy and set aside.
Grind the pork meat on a coarse blade.
Add the gravy and pork meat back to the pot.
Add the following ingredients:
3/4 C green onions tops (small rings)
1/2 tsp salt
Cajun seasoning to taste.
Bring to a simmer.
Add enough water so that the mixture is jiggly.
Spoon in pans/dishes and make it 3/4 thick. Let cool on counter top
and then place in fridge overnight for it to set.
Excellent dish to give away to family members as its keeps very well in the refrigerator.
