How to make Chocolate Hedgehog/Chocolate Cornflakes/Old School Dinners/Cracknell/Cornflakes Cakes
Chocolate Hedgehogs
Cooking and prep time:30-60 minutes
Serves 12 Hedgehogs
INGREDIENTS
3 cups cornflakes 50g butter 1/4 cup golden syrup 2 tbsp granulated sugar 1 tbsp cocoa powder
METHOD
-add the butter and golden syrup to a bowl and place in the microwave to melt, than set aside -add the cornflakes to a bowl and slightly crush them -add in the granulated sugar and cocoa powder and mix it all well -now pour in the melted butter and golden syrup and combine well making sure all the cornflakes is covered in the syrup as this will allow it to stick together -if your syrup is too much or the mixture is too sticky than you will need to add in more crushed cornflakes otherwise the chocolate Hedgehogs will not set properly -once the mixture is ready, take an ice cream scoop and scoop out the mixture and flatten it down using a spoon. Now flip over onto a plate with baking paper -repeat the same procedure with the remaining mixture -once you have made all the chocolate Hedgehogs place them in the fridge and allow to set for 30 minutes to 1 hour -once allowed to set, your chocolate hedgehogs are ready to be served. Serve on its own or with warm custard drizzled over. Enjoy!

In this video, the KICA Academy Brand Chef, Oleksandr Trofimenkov, will share the foolproof cake pops recipe – one of the magnificent pastries from the festive collection “Christmas Cookie Cookbook”.
Step by step, you will make a mixture of chocolate sponge crumbs and dark chocolate ganache, shape the cake pops to look like hedgehogs, and cover with a crisp, dark chocolate coating.
To make the cake pops look realistics, the Chef used sunflower seeds for the hedgehog’s spikes, and drew on the hedgehog’s eyes and nose with white and dark chocolate. The special final touch is handcrafted marzipan apples and mushrooms that are placed on top of the hedgehog.

Ingredients:
2 X 25cm sponge cakes or on single cake tall enough to get two 2.5-3cm slices from.
750g chocolate butter cream frosting
Black frosting
White Frosting
1 Black candy ball for the nose
Chocolate sticks for spikes git to a length of 3.5cm
Instructions:
Remove the dome from the cake and cut into two slices 2.5 – 3cm tall.
Sandwich together the two slices of cake with a little chocolate butter cream frosting
Slice the two sides off the cake leaving a 11cm central section (reserving the off cuts)
Take off tow angels at one end to form a point which will be the nose of the hedgehog.
Take the two semi circular pieces and using more butter cream frosting to place them to form the ‘back’ of the hedgehog. Trimming away and over hang.
Cover the entire cake with a thin layer of butter cream frosting.
Place the off cuts in a bowl and add 3 tbsp of butter cream frosting and break into crumbs.
Use the crumble mix to pad out the sides of the hedgehog and make it more circular and cover with forsting.
Pipe on a ‘brow’ of chocolate frosting and then a thicker layer over the back of the hedgehog.
Smooth with a palate knife.
Using a fork, create texture to mock the hair on a hedgehog.
Add the chocolate sticks to look like spikes and then pipe on a face adding the candy for a nose.
