Who Hash #003 | Ultimate Cabin Breakfast Hash
Who Hash meals at our house are leftover/fridge purge concoctions that we make up on the spot. Today’s Who Hash was made up of extra uncooked ingredients that were left after trying other recipes. You know how it is when a recipe calls for 2 lbs. of ground beef, but the closest size at the store is 2.25 lbs? I always follow a new recipe to the letter on the first try so as not to skew the formula so I inevitably end up with ¼ lb. of leftover uncooked beef. And so it was for all the other components of this week’s Who Hash.
We usually have these on a weekend morning, but Who Hashes are pretty great as an impromptu dinner when I don't feel like going to the store. Breakfast can be oddly satisfying after a long day.
Don’t stress out too much about the exact ingredients. These recipes are more about method over precision. I went shakshuka/eggs in purgatory style by making a base and then adding whole eggs to poach on top of everything. Customize with whatever you have on hand and season as you like.
Today’s Ingredients:
3 oz pork salt, diced
4 oz ground beef
4 oz smoked sausage, sliced
1 TB butter
2 red potatoes, diced
1 large shallot
3 small sweet peppers (red, yellow, orange), chopped
1 large jalapeno pepper, chopped
½ jar marinara sauce
4 eggs
salt & pepper – season as you go and to your liking
Instructions:
1. Cook each of the meats until browned. The smoked sausage was already fully cooked so I just threw them in to pick up some color.
2. Add butter and potatoes and cook, stirring occasionally for several minutes until the potatoes are cooked mostly to their centers (they will finish cooking by the end of the recipe)
3. Stir in shallots (or other onion/allium) and peppers to soften a while.
4. Return the meats and stir in marinara sauce until thoroughly dispersed.
5. Use a spoon to make shallow indents and crack an egg into each.
6. Cover and cook until the egg whites set.

Ingredients for a Corned Beef Hash Recipe
12 oz CANNED CORNED BEEF
2 med POTATOES
1 Lg ONION
2-3 Tbsp WORCESTERSHIRE
1 tsp PAPRIKA
1 tsp CARAWAY SEEDS (optional)
OIL for the skillet
SALT and PEPPER to taste
...add a little fresh or dried HOT PEPPER if desired
How to make Corned Beef Hash
Heat oil in a skillet on medium heat.
I like to slice and sear my corned beef in the skillet while I prep the other ingredients for this dish. Corned beef in the can is already cooked, but that sear adds even more flavor to the recipe.
Remove seared beef from the skillet and set aside.
Add in diced potatoes. Cut potatoes uniformly, slightly smaller than a game die. You can skin the potatoes if you like, but why? It’s easier not to skin the potatoes, and the skin is good, so think about it, dude. Sauté potatoes for about five minutes. Give the dish an occasional stir, but not too much.
Mix in the chopped onion, and continue sautéing another 5 minutes.
Add in Worcestershire sauce, salt, and pepper and cook for another 5 minutes.
Shred corned beef into the skillet and mix well. Raise the skillet temperature to medium high and continue cooking 5-10 minutes more, or until the dish is done to your liking.

This Corned Beef Hash Soup is Hearty and comforting at best. This meaty corned beef hash soup has it all – ready on the table in about 30 mins. Relatively inexpensive – filling with meat and veggies all from a can to a bowl serve with crusty bread and butter or in a giant Yorkshire pudding – it doesn’t get much better!
