Melomakárona (Μελομακάρονα), pronounced 'Me-lo-ma-KA-ro-na' is a traditional Greek and Cypriot Honey Soaked Macaroon sweet, made of flour, oil, nuts, dates and honey syrup among other ingredients. It is a sweet that is typically made at Christmas time. In recent years, it is common to find Melomakárona finished with a coating of melted chocolate or desiccated coconut -- just a thought to bear in mind if you're feeling particularly creative!

Honey macaroons
6 cups flour
2 tbs baking powder
1 ½ cups semolina (fine)
2 cups oil (1 1/3 vegetable oil + 2/3 olive oil)
¾ cup sugar
1/2 cup orange juice + orange peel
1 cup of ground walnuts
A shot of cognac
Half a beer (gently poured with no foam)
1 tbs of ground cinnamon
1 tsp of ground clover
Syrup:
2 cups sugar
2 cups water
1 cup of honey
4-5 cinnamon sticks
5 whole clover
1/4 lemon
2 cups of ground walnuts to sprinkle on top
Mix the sugar, oil, orange juice, cognac, cinnamon and ground clover. Add mixture of flour, baking powder and semolina. Pour the 1/2 beer gently without producing foam. The dough has to be soft in order to be shaped into small macaroons. Depending on your flour you may have to add a little more flour until you get the proper consistency (not too sticky – not too hard)
Bake the cookies 35-40 min. or until lightly browned at 350°F. If you are using a convention oven, your oven should automatically adjust to the lower temperature of 325°F.
To make the syrup place sugar, water and honey in a saucepan, and boil for 5 minutes. Skim any foam that rises to the top. Gently place the cool cookies in the pan and leave them for 90 seconds. Transfer them on a large serving dish and sprinkle with cinnamon and chopped walnuts.
Tip: All ingredients (oil, species, walnuts) need to be fresh and of superior quality.
COCONUT MACAROONS | easy, almost healthy, coconut cookies!
Coconut macaroons are bite sized treats (like a coconut cookie!) with a crispy coating and chewy interior. But when dipped in chocolate, they make for one indulgent dessert.
Classic coconut macaroons are little dollops that contain sweetened condensed milk (which is dairy and extra sugar). But we're ditching that today to keep these lighter, fluffier, and less sugary. They're also gluten-free and dairy-free!
This version is easy, almost healthy (*wink*) and utterly delicious. I think they're the best, and one of my personal favorite sweet treats. Hope you love them too!

After a day the frozen honey can be a bit melted
Quickly add egg white to coconut
Egg whites glue will look good and coconut sticks very well
Once you've done the process, give it a round shape and put it on ice and wait another night We add two more egg whites and do the same Do this three or four times
