How To make Htipiti
Karen Mintzias 1/2 lb Feta
3 tb Oilve oil
1 md Italian pepper
seeded & finely chopped 1 Pickled green pepper

seeded and chopped 2 ts Oregano
Pepper to taste 1/2 Lemon; strained juice only
Black olive; for garnish Htipiti (pronounced h-tee-pee-TEE and translated as "that which is beaten") is the name Macedonians gave to this tart feta spread. The longer it is beaten, the more tart it will be. In medium-size bowl, mash feta with fork or potato masher and slowly add olive oil, chopped peppers, oregano, and black pepper. Pulverize mixture for about 10 minutes (less if using a food processor), pouring in lemon juice a little at a time, until feta is creamy. Cover and refrigerate at least 1 hour before serving. INGREDIENTS
260 g | 1 cup feta cheese
3 roasted red peppers
2 cloves garlic
1/4 cup | 60 mL olive oil
1 tbsp | 6 g red chili flakes
2 tbsp | 30 mL lemon juice
1 tbsp | 30 mL red wine vinegar
1/2 tsp | 3 g salt

Easy to make, tasty Greek taverna spicy feta dip (τυροκαυτερή, tirokafteri). Ingredients: bell pepper, few small tomatoes, 3-4 chillies, 200gr feta cheese, paprika, oregano, salt, ¼ cup olive oil, 500gr yogurt (preferably strained/Greek). Chop the veg and let them drain, crush the feta and add all the ingredients, mixing well. Goes great with souvlaki Greek skewers, see for recipe

The Best Spicy Whipped Feta Dip
275g Feta
200 grams Greek Yogurt
1 roasted red pepper
1 clove of Garlic
2 Tsp Chili Flakes or 1 fresh chili pepper
2 TBSP Olive oil
All right Food-Dees
Let's start by adding 1 clove of garlic to our food processor.
I am going to use a garlic press to make sure the garlic is fine enough when it's blended
let's add in our roasted red pepper.
If you don't know how to roast a red pepper you can use a Jared Peppers

Add in the 2 tbsp of olive oil and 2 tsp of chilis then
Blend for 10 seconds to combine
Once they all got to know each other go ahead and add in 200g or 7 ounces of greek yogurt
and blend again for another 10 seconds
Now to add the best part 275 grams or 9.7 ounces of the best Greek Feta Cheese you can buy preferably right from a barrel shipped in from Greece
Blend once last time until you have a smooth creamy spicy feta dip

2 spetspaprikor
0,5 dl extra jungfruolivolja
70 g fetaost, krossad
1 tsk cayennepeppar
svartpeppar

Recept
1. Förvärm ugnen till 250 grader. Rosta paprikorna längst upp i ugnen under grillelementen i ca 15 minuter, vänd halvvägs.
2. När paprikorna har mörknat, täck dem med en skål så att skalen lättare lossnar senare. Skala paprikorna och ta bort frökapslarna.
3. Lägg paprikorna i en skål tillsammans med olivoljan och mixa med en stavmixer eller gaffel. Tillsätt sedan fetaost, cayennepeppar och svartpeppar och blanda noggrant med en gaffel. Krossa fetaosten med en gaffel.
4. Avsluta med att krydda din htipiti med salt efter egen smak.

70 g fetajuustoa, murennettuna
1 tl cayennepippuria
mustapippuria

Ohje
1. Kuumenna uunia 250-asteiseksi. Paahda paprikoita uunin ylätasolla, grillivastusten alla noin 15 min kääntäen niitä puolivälissä.
2. Kun paprikat ovat tummuneet, peitä ne kulholla, jotta niiden kuoret myöhemmin irtoaisivat helpommin. Kuori paprikat ja poista niiden siemenkodat.
3. Siirrä paprikat kulhoon yhdessä oliiivöljyn kanssa ja soseuta sauvasekoittimella tai haarukalla. Lisää sitten feta, cayennepippuri ja mustapippuri ja sekoita huolellisesti haarukalla. Murskaa fetaa haarukan avulla.
4. Mausta htipiti lopuksi tarpeen mukaan suolalla.
