How To make Impossible Taco Pie
Ingredients

beef, ground

cup
onion, chopped

taco seasoning envelopes, dry

bisquick
1 1/4

milk

eggs

cheddar cheese, shredded
1/4
each
head lettuce, shredded
1
each
tomato, diced
1/4
cup
ripe olives, sliced
Directions:
Preheat oven to 400 degrees. Grease pie plate, 10x1 1/2, or square baking dish, 8x8 inches. Cook and stir the ground beef and onion in 10 inch skillet until beef is brown; drain. Stir in seasoning mix. Spoon into pie plate.
Beat baking mix, milk and eggs about 1 minute with wire whisk or hand beater or til almost smooth. Pour into pie plate. Bake about 25 minutes or til knife inserted in center comes out clean. Sprinkle with cheese. Bake about 2 minutes longer or til cheese is melted. Cool 5 min. Garnish with lettuce, tomatoe and olives.
FOR 1/2 RECIPE: Use 1 quart square or round casserole. Decrease baking mix to 1/2 cup, milk to 3/4 cup, and eggs to 2. Divide remaining ingredient amounts in half. Decrease beat time to 10 seconds in blender or 30 seconds with wire whisk or hand beater.

Gluten Free Bisquick Impossible Taco Pie
This kid friendly Seven Layer Impossible Taco Pie uses ground chicken instead of beef so it's a diet friendly dish as well. To help increase the nutrition I've added some beans to the pie like you might find in a seven layer dip. Bisquick's classic impossible topping and low fat cheddar finish off the pie itself. The remaining ingredients are layered on as garnishes so that everyone can tailor the dish to their own tastes. Let's face it, kids can't resist anything with the word taco in the title. 1 package of taco seasoning (gluten free)
¾ cup gluten free Bisquick
3 eggs
1 ¼ cup milk
2 oz low fat cheddar, grated
To Garnish With:
Additional salsa
chopped olives
scallions
grated cheddar
diced tomatoes
parsley or cilantro

Recipe - Impossibly Easy Taco Pie
INGREDIENTS:
-1 pound lean ground beef
●1 medium onion, chopped (1/2 cup)
●1 package (1 ounce) Old El Paso taco seasoning mix
●1 can (4 1/2 ounces) Old El Paso chopped green chiles, drained
●1 cup milk
●2 eggs
●1/2 cup Original Bisquick mix
●3/4 cup shredded Monterey Jack or Cheddar cheese (3 ounces)
●Old El Paso salsa (any variety)
●Sour cream, if desired

Impossible Easy Taco Pie ~ Gluten Free
1-1-1/2# Ground Beef
1 small onion Chopped
Salt and Pepper
Brown meat and onion: Drain Fat
Add and stir well:
1 Pkg. Taco Seasonings (***SEE FOOT NOTE***)
1-1-1/2 cups Salsa (Add just enough to coat the meat)
Place in a greased 9 Glass Pie Plate (Spray with cooking spray)
Top with:
1-1-1/2 Cups Shredded Mexican Cheese
In a separate bowl combine:
2 eggs
1 cup Milk
½ cup Gluten Free Bisquick (Use Regular Bisquick if not on a Gluten Free Diet)
I used a Wire Whisk to combine.
Pour this mixture over the Meat and Cheese.
I placed my Pie Plate on a pizza pan to catch any drippings
Bake in a 400* preheated oven
For 25-30 minutes or until a knife inserted in the middle comes out clean.
Let cool on a wire wrack before cutting and serving. This helps to hold the pie together.
Serve with:
Sliced Avocado
Sliced Tomatoes
Sour Cream
Salsa

Old El Paso Taco Seasoning Mix:
I have been using The Old El Paso Taco Seasoning Mix and have not had any issues. Products do change from time to time so its always best to read the label and check websites to make sure they are Gluten Free.
If you are concerned about Gluten, I have seen 100 of recipes to make the mixes yourself. They are all very simple to make. I just Google how to make your own mix and up popped a lots of recipes.
