Recipe (serves 4-5 people) Brinjal 600gm, Coriander seed 1/2 teaspoon/2gm, Jeera 1/4 teaspoon/2gm, Methi seed 1/5 teaspoon 1gm, Kalonji 1/5 teaspoon/1gm, Equal quantity of mustard seed, methi, ajwain, kalonji and saunf 1.5 teaspoon/8 gm, Haldi 1 teaspoon/5 gm, Salt 1 teaspoon/5gm, Amchur 1 teaspoon/5gm, Mustard oil 100ml

Chicken Bacon Chowder
We mostly followed the recipe. However we added turkey meat to the recipe that I had leftover from Thanksgiving in the freezer. Everything was great by itself but for whatever reason when we combined them, it was just not the tastiest chowder that we’ve ever had. I would say follow the recipe you will be fine.

Split Pea Soup with Ham - Made From Scratch Using a Ham Bone
Split Pea Soup can be made using a leftover ham bone. It adds incredible flavor. The hardest part of this recipe is time. It takes time to develop a broth that is filled with flavor. That is the key to this soup and what makes it so very yummy!

Split Pea Soup: Recipe by Indiana Mommy – Cooking From the Heart Land
Ingredients:
1 Ham Bone or Ham Hock
2 cups dried split peas - picked through and rinsed
1 onion – diced
4 carrots – diced
3 stalks of celery – diced
1 teaspoon black pepper
1 bay leaf
1 bunch of fresh thyme
Start out by putting a ham bone or ham hock in a stock pot and cover with water. Bring the water up to a boil on the stovetop and then lower to a simmer and cook covered for 1.5 hours. Pull out the ham bone and remove any meat. Place the bones back in the water and simmer for an additional hour. Strain the stock and allow it to cool for 30 minutes in a bowl. Once cooled, skim off the fat from the top.
Shred the ham meat and remove any cartilage or fat, set the meat aside.
In the same stock pot, sauté the onion, celery and carrots for 15 minutes until they are softened. Then add the dried split peas and saute for 5 minutes. You may or may not need to use olive oil to saute the vegetables. There was residual fat in my stock pot from the ham stock cooking so I didn’t need to.
Add the stock, bay leaf, fresh thyme and black pepper to the vegetables and bring up to a boil, then reduce to a simmer and cook for 1 ½ hours partially covered, stirring occasionally. Once the peas are breaking down add the cooked and shredded ham meat to the pot. Stir and let simmer for 30 more minutes.
Allow the soup to cool for 30 minutes to thicken up before serving. Or if you don’t mind it being a little thinner, eat right away ????

Pork Version:
- 3/4 lb (454g) pork skin
- 1.5 lbs (680g) pork neck bones
- 1/2 lb (226g) pork Boston Butt (browned)
- 2-3 green onion, sliced into 1 inch pieces
- 1 inch knob Ginger sliced
- 5 cups (1.1kg) water
- salt to taste
Chicken Version:
- 3 lbs (1.36kg) chicken back and necks
- 1 inch Knob Ginger sliced
- 2 green onions, cut into pieces
- 1/2 cup (236g) water
Dumpling Dough:
- 1 1/4 cup or 170g all purpose flour
- 3 1/2 tablespoons 50g hot water
- 3 tablespoons 40g room temperature water
Pork Filling:
- 1 lb (450g) high fat ground pork
- 1.5 tablespoons (22g) shaoxing wine
- 2 tablespoon (30g) soy sauce
- pinch ground white pepper
- 1/2 teaspoon (2g) sugar
- 1/2 teaspoon (2g) salt
- 3 green onion, very finely minced
- 1/2 teaspoon (3g) sesame oil
- 1 cup (235g) broth gel, diced into 1/2 inch pieces
Dipping Sauce:
- 2 tablespoons (17g) spicy chili crisp
- 1/3 cup (88g) black vinegar
- 2 inch knob Ginger, julienned
