How To make Irish Pumpkin Pie
1 9 inch unbaked pie shell
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon freshly grated ginger
2 eggs
1 3/4 cups canned pumpkin
6 ounces Guinness Beer
Combine sugar, salt, cinnamon, and ginger in a bowl. Lightly beat in two eggs. Stir in canned pumpkin and Guinness beer until well combined. Pour mixture into pie shell; preheat oven to 425 degrees and bake for 15 minutes. Reduce heat to 350 degrees, and bake an additional 45-50 minutes, or until fork placed in center of the pie comes out clean. Cool, and serve.

My take on this holiday dessert favorite. I take Pumpkin Pie, Deconstruct it, and place it in a Vanilla Base with Crushed Graham Crackers.
How to Make Pumpkin Pie Ice Cream.
2 Cups Heavy Cream
1 Cup Whole Milk
1 Cup White Granulated Sugar
2 Egg Yolks
1/2 Cup Pumpkin Puree
1/4 Tsp Sea Salt
1/2 Tsp Ground Ginger
1/2 Tsp Cinnamon
1/8 Tsp Ground Cloves
1/2 Tsp Pure Vanilla Extract
8 Graham Crackers (crush to desired size)
3 Tblsp Bailey's Pumpkin Spice (Optional)
Mix all Ingredients into Pan
Heat Mixture on Stove to 185°F
Cool Mixture in Refrigerator for Min 1 hr
Take chilled mixture, add Bailey's and place in Ice Cream Machine, until desired consistency has been reached.
Place Immediately in freezer.

INGREDIENTS:
PIE CRUST
¾ CUP CARBALOSE FLOUR
¾ CUP BLANCHED ALMOND FLOUR
½ TEASPON SALT
½ CUP BUTTER, FROZEN AND DICED
¼ CUP VODKA
½ TEASPOON CINNAMON
¼ TEASPOON GROUND GINGER
PINCH OF GROUND CLOVE
PUMPKIN PIE FILLING
15 OUNCES PUMPKIN PUREE
12 OUNCES EVAPORATED MILK
2 WHOLE EGGS
¾ CUP BROWN SUGAR SUBSTITUTE
1 TEASPOON CINNAMON
½ TEASPOON SALT
½ TEASPOON GROUND GINGER
¼ TEASPOON GROUND CLOVE
1 TEASPOON VANILLA BEAN PASTE
INSTRUCTIONS
PREHEAT OVEN TO 350 DEGREES.
FOR CRUST.
COMBINE ALL DRY INGREDIENTS AND SPICES. ADD FROZEN BUTTER AND “CUT IN” TO MIXTURE. YOU CAN USE EITHER YOUR HANDS, OR A PASTRY CUTTER FOR THIS. ONCE MIXTURE RESEMBLES CORNMEAL TEXTURE; ADD VODKA AND MIX TOGETHER TO FORM A BALL. WRAP IN PLASTIC WRAP AND COOL IN REFRIGERATOR FOR 30 MINUTES.
FOR PIE FILLING
COMBINE SUGAR SUBSTITUTE AND SPICES TOGETHER. WHISK TO COMBINE. ADD EVAPORATED MILK, AND COMBINE. THEN ADD PUMPKIN PUREE. LAST, ADD VANILLA. SET ASIDE.
ROLL OUT PIE CRUST. POKE CRUST WITH A FORK TO AID IN BAKING. PAR BAKE FOR 10 MINUTES.
REMOVE CRUST FROM OVEN, AND PUT IN FILLING. BAKE FOR 20 MINUTES AND CHECK EDGES OF CRUST FOR BROWNING. IF CRUST IS GETTING TOO BROWN, THEN WRAP EDGE WITH FOIL AND CONTINUE BAKING.
BAKE FOR ANOTHER 25 - 30 MINUTES OR UNTIL THE CENTER ⅓ OF THE PIE SHAKES SLIGHTLY. REMOVE FROM OVEN AND ALLOW TO COOL COMPLETELY.

NO BAKE - TURTLE PUMPKIN PIE
Ingredients:
1/4 cup plus 2 Tbsp of caramel topping, divided
1 Graham Pie Crust
1/2 cup and another 2 Tbsp of chopped pecans
1 cup cold milk
1 tsp ground cinnamon
1 tsp ground nutmeg
1 cup canned pure pumpkin puree
1 tub (8oz) thawed Cool whipped topping, divided
2 packages Jello Vanilla Instant pudding mix (4 Serving size)
Directions:
01. Whisk Milk, Pudding mix, Pumpkin puree and spices together in a bowl until fully blended.
02. Stir in 1 1/2 cups of whipped topping and set aside.
03. Grab your pie crust and spread 1/4 cup of caramel topping on the bottom of the pie crust. Then sprinkle 1/2 chopped pecans on top.
04. Grab your pumpkin mixture and add to the pie crust.
05. Refrigerate for 1 hour
06. Add the rest of your cool whip. Top with more chopped pecans and drizzle some of the caramel topping on top with a spoon.
