How To make Italian Frittelle
2 pk Active dry yeast
1 c Warm water
2 c Flour; up to 3 c
1 ts Salt
2 ts Anise seed
2 tb Olive oil
1 c Dark seedless raisins
1 c Oil for frying
1 1/2 c Honey
2 tb Lemon juice
Dissolve yeast in warm water; combine flour, salt and anise seeds in a bowl; gradually add the yeast and olive oil, mixing until a rather soft dough is formed; turn out onto a floured board and knead for 10 minutes, until dough is smooth and elastic; scatter raisins over board and knead the dough over them until they have been incorporated; shape dough into a ball, cover with a clean kitchen towel and let rise in a warm place for 1 hour, or until doubled in bulk; with the palms of your hands, flatten the dough down to 1/2 inch thickness; let rest, uncovered, for 15 minutes; use a sharp knife to cut the dough into 36 diamonds; heat oil and fry the diamonds, a few at a time, turning until golden brown on both sides; transfer to paper towels to drain; heat honey with lemon juice and boil for 3 minutes; arrange fritelle on a serving plate and pour the hot honey over

3 big apples
150 grams (1.2 cups) all-purpose flour + 2 tbsp for coating the apples
8 grams (1.7 tsp) baking powder
1 tsp cinnamon
1 pinch salt
125 ml (0.5 cups) sparkling water
80 grams (0.3 cups) plant milk cold
20 grams (1.4 tbsp) sugar
vanilla aroma + lemon zest optional
1.5 liter (0.4 gal) frying oil
Topping
1 tbsp powdered sugar or cinnamon + sugar
300 g vegan custard to dip them in

For the pancakes
100 g (1 cup) rolled oats
180 g (0.7 cups) plant milk any
1 ripe banana
2 tbsp sunflower seed oil or coconut oil
1 pinch salt
1 tsp baking soda
½ tsp baking powder
For the apple compote
2 apples
1 cup water
1 tbsp sugar unrefined
1 tbsp raisins
1 tsp cinnamon
For the apple syrup
Apple cooking juice from the compote above
2 tbsp sugar unrefined
Toppings
1 tbsp walnuts
grated orange zest

Panzerotti o frittelle with mozzarella, Monopoli (Puglia) Italy
Panzerotti with mozzarella from Puglia
ingredients:
g. 200 of flour
g.150 semolina
ml.100 of sparkling water
ml. 100 of milk
g. 30 of butter
a pinch of sugar,
g. 8 of salt, a yeast filling:
mozzarella cheese, a tablespoon of tomato paste, a pinch of salt
in a pan put the sparkling water, milk and butter, heat it all for a few minutes. Dough pour the liquid and dissolve the yeast with a pinch of sugar, add the flour, salt at last. Knead for ten minutes. Then take the dough and roll into balls, cover with a cloth and let rise until doubled. Cut the mozzarella into cubes and season with a little 'salt and tomato sauce (mozzarella must be cut when the dough is ready). A leavening took place with the help of a rolling pin to give the balls a circular shape and fill with the filling of mozzarella. Close the panzerotti crescent and with the help of a dough cutter to cut the excess dough and proceed to the end of the ingredients. Warm up in a large pot abundant seed oil, when hot fry the panzerotti, turning them during cooking. When they are golden remove them with a slotted spoon and let them dry on paper towels.

Carnevale is an Italian celebration that occurs annually in the lead-up to Ash Wednesday. In the United States, we know it as Mardi Gras.
COVID-19 prevented the usual vibrant Carnevale celebrations with masks, costumes, parades, and parties. However, frittelle and crostoli, Italian pastries, play another important role in how Italians celebrate this period. The USAG Italy Public Affairs Office brings you inside a local pasticceria that has been serving customers since 1910, Pasticceria Ferracina.
We thank the staff Pasticceria Ferracina for being so kind in providing us the story of their family bakery, as well as a behind-the-scenes look at how frittelle and crostoli are made.
We are not endorsing the bakery as it was one of the many we had to choose from. All of the bakeries in our area are top-notch.

FRITTELLE VELOCI DI CARNEVALE AL FORNO♥️
Frittelle di carnevale al forno perfette se non ami/non vuoi friggere! A casa mia è tradizione preparare le frittelle a carnevale, mia nonna le faceva SEMPRE. Mia mamma invece che non ama l’odore del fritto, faceva la versione al forno! Quindi l’ho fatta anche io però senza latte e senza uova♥️ inoltre queste si preparano in un attimo!
Ingredienti per circa 40 frittelle dal diametro di 2,5cm:
250g di farina 1 (va bene anche 00, 2..)
250ml di bevanda vegetale (avena/soia/mandorla)
50ml di olio d’oliva delicato/semi
2 cucchiaini di lievito per dolci
Scorza di limone
40g di zucchero
100g di uvetta
Zucchero a velo facoltativo
Procedimento:
In una ciotola uniamo la farina, lo zucchero e il lievito per dolci. Poi la bevanda vegetale, l’olio, la scorza di limone e l’uvetta precedentemente reidratata e asciugata. Mescoliamo e trasferiamo negli stampi in silicone (i miei hanno le palline dal diametro di 2,5 cm) e cuociamo nel forno statico preriscaldato a 180 gradi per 15/20 minuti - fino a doratura! Un po’ di zucchero a velo in superficie e sono perfette se volete accontentare la vostra famiglia ma non volete friggere!
