For this Bacon Wrapped Jalapeno Chicken Thighs recipe I’m using boneless, skinless chicken thighs. You can find these at your local grocery store fresh or frozen, and you can even debone them yourself if you want.
Ingredients for Bacon Wrapped Jalapeno Chicken Thighs:
- 8 Boneless Skinless Chicken Thighs
- 4 Jalapeno Peppers
- 8oz Cream Cheese
- 8 Strips of Bacon
- 1 Stick of Real Butter
- Killer Hogs The BBQ Sauce (or your favorite BBQ Sauce)
- Killer Hogs The BBQ Rub (or your favorite BBQ Rub)
Remove the thighs from the packaging and place on a cutting board designated for poultry. If there is any excess fat on the thighs go ahead and trim it off. Season each side with a good dose of my All Purpose Seasoning.
Split the Jalapeño Peppers in half lengthwise and remove the seeds and veins. Fill each half with cream cheese and sprinkle a touch of Dry Rub on top.
Place the stuffed pepper cheese side down in the center of each chicken thigh and form the meat around the pepper. Next wrap each thigh with a strip of bacon.
To keep the thighs in a natural shape while cooking I use one of my Competition Chicken Pans. Spray the pan with cooking spray and place each thigh upright in the pan. Season the thighs with a little Killer Hogs Dry Rub and place a Tablespoon of Butter on each one.
For this cook I’m using my Big Green Egg running at 300 degrees. Throw on a couple chunks of pecan for some smoke and place the chicken pan on the center of the grate.
After 45 minutes the bacon should start to brown and the chicken will have absorbed enough smoke flavor. Cover the pan with aluminum foil and continue to cook until the internal temperature hits 165 degrees. At this point remove the pan from the smoker. Be sure to where insulated gloves because it will be hot. Carefully take each thigh out of the chicken pan and re-season each side with Bbq Rub. Place the thighs on a chicken rack and back out on the smoker for 5-10 minutes. This gives the rub time to dry.
For the finishing glaze I use a bottle of Killer Hogs The Bbq Sauce. Heat it in a small pan or in the microwave for 5 minutes stirring occasionally. Once the rub has set, dunk each thigh in the warm sauce and place it back on the rack to drain.
The rack goes back on the Egg for a final 5-10 minutes. Just long enough for it to “tack up”. If you see it getting dark remove the thighs immediately.
Let the thighs rest for just a few minutes and they’re ready to serve these Bacon Wrapped Jalapeno Chicken Thighs.

Ingrediants :
200 gm Chicken Breast
¼ tsp Ginger Garlic Paste
¼ tsp Black Pepper Powder
1 tsp Salt
¼ tsp Lemon Juice
1 cup Chicken Stock
½ small chopped Onion
4 finely chopped Jalapeno
½ tsp finely chopped Garlic
2 tbsp Fresh Cream
3 tbsp grated Cheese
1 tsp chopped Coriander Leaves
2 tbsp Oil
For frying Chicken Breast :
Take a Chicken Breast and poke it all over with the help of a fork, so that after frying we will get a soft and flavour some chicken breast. Now marinate it with ¼ tsp Ginger Garlic Paste, ¼ tsp Black Pepper Powder, ¼ tsp Salt and ¼ tsp Lemon Juice. Coat well and take it aside.
For the Final Stage :
In a pan take 2 tbsp Oil and fry the Chicken Breast. Fry both sides for 3-4 mins. Take it aside to cool down.
Now in this pan add chopped Onion and fry it till golden brown. Now add finely chopped Jalapeno, finely chopped Garlic and Salt. Saute it for 2-3 mins. Now add 1 cup Chicken stock and boil everything for 2 mins. Now add 2 tbsp Fresh Cream and 3 tbsp grated Cheese. Stir it continuosly to mix well. Switch the gas to medium flame and cook the sauce until it gets thicker. After cooling down the sauce will get more thick, so make sure that u cook it till a little runny. Now add 1 tsp finely chopped Coriander leaves. And the Jalapeno Sauce is ready!
For Garnishing :
I sliced the Chicken Breast and spread the Jalapeno Sauce over it. And i add some boiled and then sauted Beans in Butter and a pinch of Salt & Pepper.
And your Grilled Chicken Breast with Cheesy Jalapeno Sauce is ready guys!

Smoked Chicken Bombs Recipe...These Are AMAZING! | Ash Kickin' BBQ
In today's video, I'm showing you my recipe for smoked chicken bombs, and these are amazing! If you've never had a smoked chicken bomb, let me break it down for you. It's basically a jalapeno popper, wrapped in a chicken thigh, and then wrapped in bacon. The prep is a little labor intensive, but these can be made ahead of time, and then smoked the next day. These are a perfect BBQ snack or appetizer, and they're also going to be perfect for Football Sundays this fall! This were incredibly simple to cook, and for this cook I utilized my Lone Star Grillz Pellet Grill, which is one of my favorite smokers to cook on! For the seasoning I went with my Ash Kickin' BBQ Honey Chipotle which paired extremely well with the sweet heat of these smoked chicken bombs! If there's one recipe you make on the grill, smoker, pellet grill, or pellet smoker this summer, it has to be smoked chicken bombs!

| Ingredients |
-6 boneless skinless chicken thighs
-Ash Kickin' BBQ Honey Chipotle
-6 jalapenos
-A pack of thin cut bacon
- Raspberry Chipotle BBQ Sauce
-1 cup of shredded cheddar cheese
-1 block of cream cheese
| Instructions |
Prep:
1. Cut the stems off of the jalapenos per the instructions in the video, and then make a slit down the side of the jalapeno. Dig out all the seeds and veins with a spoon.
2. Combine the cheddar cheese and cream cheese into a bowl, season with about a 1/4 cup of Ash Kickin' BBQ Honey Chipotle Rub, and mix together so everything is incorperated.
3. Stuff your peppers per the videos instructions.
4. Put your chicken thighs in a plastic bag, and pound them out so they're flat and even.
5. Season both sides of your chicken thighs with Ash Kickin' BBQ Honey Chipotle.
6. Wrap the chicken thighs around the stuffed jalapenos per the videos instructions.
7. Wrap the chicken bombs with bacon per the videos instructions.
8. Apply a light layer of rub on the bacon once wrapped, and before smoking.
| Cooking |
1. Set your smoker for 300°F
2. Put your smoked chicken bombs on the smoker, and allow them to cook for 1 hour.
3. After one hour, check the temperature of the smoked chicken bombs, they likely will not be done, and at this point keep cooking them, or move them to a hotter zone on your smoker to cook for another 30-45 minutes.
4. After another 30-45 minutes, check the temperature on the chicken bombs, thighs can handle a higher internal temperature due to the fat in the dark meat. The main thing you want is the bacon to be cooked thoroughly.
5. Once the bacon is cooked, and your thighs are 175° F or higher, brush with the raspberry chipotle BBQ sauce, and allow the sauce to set for 5 minutes.
6. After 5 minutes, remove the smoked chicken bombs from the smoker, and allow them to rest for 15-20 minutes.
7. After the smoked chicken bombs have rested for 15-20 minutes, slice, eat, and enjoy!

-Worcestershire sauce 2 tbs
-Pickle water 1 tbs
-Brown sugar 2 tsp
-Lehsan (Garlic) chopped ½ tbs
-Boneless chicken small cubes 350g
-Namak (Salt) ½ tsp or to taste
-Paprika powder 1 tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Cornflour 1 & ½ tbs
-Cooking oil 2-3 tbs
-Pyaz (Onion) chopped 1 small
-Pickled jalapeno sliced ¼ Cup
-Bread large as required
-Makhan (Butter)
-Olper’s Cheddar cheese slice
-Olper’s Mozzarella cheese as required
Directions:
-In a small jug,add worcestershire sauce,pickle water,brown sugar,garlic,mix well & set aside.
-In a bowl,add chicken,salt,paprika powder,black pepper powder,cornflour & mix well.
-In a frying pan,add cooking oil,chicken,mix well & cook on medium flame until golden (6-8 minutes).
-Add onion,pickled jalapenos,mix well & cook for a minute.
-Add prepared sauce,mix well & cook for 2-3 minutes & set aside.
-Spread butter on one side of bread slice,place cheddar cheese slice & mozzarella cheese (grated).
-Add cooked chicken & mozzarella cheese (grated),spread butter on bread slice & flip to make a sandwich.
-In frying pan,place sandwich,cover & toast on low flame from both sides until golden brown.
