How To make Jan Hagels
2 c Flour
1 ts Cinnamon
1 ts Ground ginger
2 Unsalted butter; sticks/sof
1 c Sugar
1 Egg; large/separated
1 ts Vanilla extract
1 tb Water
1/2 c Pecans; finely chopped
Walnuts Preheat oven to 350 deg. Lightly butter a 15 1/2 x 10 1/2 inch jelly roll pan. Combine flour, cinnamon and ginger on sheet of wax paper and set aside. In large bowl of elec. mixer, add sugar and beat until light and fluffy. Beat in egg yolk until mixture is well combined, then beat in vanilla. Add flour mixture and stir until completely incorporated. Turn dough onto prepared pan and pat it into an even sheet. In cup or small bowl, beat egg white and water until frothy and brush mixture over the dough. Sprinkle nuts evenly over dough and press them in lightly. Using a long ruler and a sharp knife, cut dough into thirds lengthwise, then cut each third crosswise into strips about 1 1/3 inches wide. Bake for about 20 mins, or until the sheet is light golden brown. (If using a CushionAire cookie sheet, baking time may be a little longer). Place pan on a rack and immediately cut along the original cutting marks. Transfer stripss to racks and allow them to cool completely. Jan Hagel Cookies
Jan Hagel Cookies is Dutch Cookies. They are buttery, crisp & flaky. Topped with sliced almonds & cinnamon rock sugar. Spiced with cinnamon & lil bit nutmeg
They are not only delicious but also smell like heaven!
Recipe:
Main Ingredients:
140gr salted butter (or unsalted, and add 1/4 tsp salt
[ ] 1/2 tsp vanilla extract
[ ] 50gr icing sugar
[ ] 50gr light brown sugar
[ ] 1 egg yolk
Dry Ingredients:
[ ] 225 gr all purpose flour
[ ] 1/2 tsp baking powder
[ ] 1/2 tsp ground cinnamon
[ ] 1/4 tsp ground nutmeg
Toppings:
egg yolk, for brushing
Slice almonds & cinnamon rock sugar
Steps:
• Pre heat the oven at 160 C. In a bowl, add all dry ingredients. Mix well and set aside.
• In a mixer bowl, add the butter, white sugar, brown sugar, and vanilla. Beat with Flat Beater in medium speed until incorporated and the color turns pale only.
• Add the egg, mix until well combined. Then add shifted dry ingredients. Mix only until well combined, don't overmix.
• Transfer the dough & place it onto the patchment paper. Place another patchment paper on top of the dough, then roll out the dough in rectangular shape. The thickness around 0.5cm
• Using pizza cutter (or knife) & ruler, mark the dough into square shape. Sprinkle with sliced almond & cinnamon sugar. Transfer to the baking pan. Bake in the oven at 160 C for about 30-35 minutes or until golden brown.
• Remove from the oven, and cut it straight away into square shape. And transfer them on the cooling rack until completely set & crispy. Transfer to the jar or airtight container. The Jan Hagel ready to serve!

- 1 kuning telur untuk polesan

Kue kering jadul sih ini, asalnya dari Belanda. Bahannya sederhana banget dan buatnya juga mudah, hanya sewaktu mengangkat dari loyang harus benar-benar menunggu dingin terlebih dahulu, karena jika masih panas/hangat maka kue kering ini akan mudah hancur atau remuk karena sangat rapuh jika belum dingin, tapi rasanya juara kok.. Untuk kali ini saya letakkan adonan ke dlm loyang lalu saya gilas rata di dalam loyang, bisa juga di uleni dulu diluar loyang kemudian buat persegi sesuai bentuk loyang dengan ketebalan 0,5 cm, dan perlahan pindahkan ke dalam loyang.
Untuk gula taburannya saya menggunakan gula pasir biasa, berhubung saya tidak menemukan ‘hagel sugar’ di pasaran negara kita..Jika teman-teman punya silahkan digunakan. Untuk tingkat warna kekuningan atau kecoklatan di hasil akhir disesuaikan selera, ada yang suka lebih golden kecoklatan, dan ada yang suka ketika masih kekuningan.. Cookies ini lumayan banget untuk menemani kopi atau teh di sore hari, terlebih untuk mengisi toples di hari raya..
