Carol and I are super excited about this post because it seems to have taken on a life of its own. That happens with a lot of our stories, and we love how it makes the creative side of our work so fun and exciting. We’re also both super pushy with each other, so when we start working on an idea... look out! You be the judge with this LEMON JELLY ROLL RECIPE - the proof is in the pudding, or in this case, the curd!
This recipe is about three key points: lemon curd, a light sponge cake, and presentation. We posted a recipe for LEMON CURD as a 1-minute City Slicker video about a week ago; if you haven’t already, check it out too! The sponge cake component is pretty simple, but our inclusion of lavender in the mix takes the flavour and fragrance to a whole new level. We made a conscious decision to present a simple, elegant dessert. Think about that when you go to take your first bite – looks lovely, but the flavour will amaze you!
Here are a few things to keep in mind as you go to create this dessert, which will garner you great praise and many, many compliments!
LEMON CURD – Although the lemon curd recipe is already posted as a stand-alone feature on our YouTube channel, I will list the ingredients and preparation steps again here just so you don’t have to flip back and forth. Suggestion: make the LEMON CURD a few days in advance just to get the preparation of this essential ingredient out of the way.
SPONGE CAKE – We purposely made the sponge cake for this recipe using Bob’s Red Mill gluten-free flour since one of our expert tasters is eating gluten-free these days – yay, Josh! We also tested this recipe using regular flour, so feel free to go with either – you’ll have the same great success with each. I’ve included a link to purchase the Bob’s Red Mill gluten-free flour in our AMAZON links below.
LAVENDER – The idea to add the ground lavender into the dry ingredients for the sponge cake came to me in a dream. I was walking through a field of daffodils and jonquils, the sun shining down on me, a robin singing sweetly from the branch of a blooming apple tree… LOL ! As if! I came across it while I was looking for baking powder in the spice cupboard. All joking aside, the flavour and fragrance it adds to the finished JELLY ROLL is sublime. Make sure to purchase more than the recipe calls for to add a sprinkle to the completed dessert.
PRESENTATION – I speak from experience when I say, keep it simple. We had just spread the lemon curd onto the sponge cake and rolled it up when we started with the questions - should we cover it with whipped cream? Or a buttercream icing and decorate it to look like a log? Maybe we can pipe more curd down the sides to create a trellis pattern? And then we all agreed, nope, let’s keep this super simple. After all, it will be about the flavour, right?
We suggest transferring the completed LEMON JELLY ROLL onto a presentation piece, then dusting it with confectioners’ sugar followed by a light sprinkle of fine lemon zest and dried lavender. Once you begin slicing and serving, go ahead and add a dollop of whipped cream, but stop there. Simplicity is truly the order of the (spring!) day.

A Swiss Roll or Jelly Roll or Roll Cake or Cream Roll, or Swiss Log, is a type of sponge cake rolled with Jam, or Icing or Cream filling in other words, it is a cylindrical cake with a spiral cross section, made from a flat sponge cake spread with a filling such as jam or cream and rolled up.
When jam is used it is Jam roll. When jelly is used it is called Jelly roll and when cream is used it becomes Cream roll. It has different names in different countries.
Swiss roll needs just a handful of ingredients such as flour, sugar, eggs and jam. It can be made without eggs too. If followed the steps carefully, it is very simple to make.

STRAWBERRY APPLE JAM
Ingredients
1. Eggs - 4 No.
2. Refined flour - 7 tbsp
3. Powdered Sugar - 8 tbsp
4. Vanilla essence - 1/2 tsp
5. Strawberry Apple Jam - 8 tbsp
( or any Jam)
Note:
Use electric hand whisk if you own one. It just take 10 minutes to get eggs to creamy consistency.
1. Bowl & Whisk
Both should be well cleaned and dry. No traces of water or oil.
Through practice whisking of eggs by hand to creamy consistency can be made in 10 to 15 minutes.
2. Whisking of eggs
Very important step here. Whisk till creamy consistency. If not whisked properly the cake will break while rolling.
3. Bake time
Bake till the cake springs back, only 10 - 12 minutes. Do not bake more than the time mentioned as it may lead to hard cake and difficult to roll and may crack while rolling.
How to Make A Raspberry Jelly Roll ~ Retro Recipe ~ Classic Sponge Cake Dessert ~ Noreen's Kitchen
Today let's go old school with this classic retro recipe for jelly roll! I have very fond memories of jelly roll from my youth. A favorite that my mom and grandmother made and filled with classic raspberry jam. You can fill this simple sponge cake with anything you like. I love it with strawberry mousse, lemon filling or even with Nutella! No matter what direction you choose, this classic dessert is perfect for the warmer months of summer. It is light and delicious and requires little more than a dusting of powdered sugar and a dollop of freshly whipped cream.
I was recently roaming the internet for some inspiration with summer in mind and the jelly roll crossed my path. This invoked memories of my child hood when jelly rolls were as pervasive as Hostess cakes are today. I remember being able to purchase whole rolls of raspberry filled goodness in little cellophane packages in which the roll was protected by a pristine white corrugated board on three sides. Making it easy for you to see both ends and the tender sponge of the cake. I also remember being able to purchase individual slices that were wrapped in a similar fashion. Jelly roll was a ubiquitous dessert that just fizzled into the background, so much culinary ephemera of a bygone time.
The classics are the best, in my opinion and when my memory was jogged, I got busy making one. I seriously did! After dinner one Sunday evening a few weeks back, I whipped up this delicious dessert for the family to enjoy. This is the perfect sponge that bakes up fast and cools in no time, making way for the filling, the rolling and the slicing. It's so simple, yet so delicious, if you have never had the pleasure of enjoying a jelly roll, I hope you will do so soon.
This all starts with a classic sponge cake. Lots of eggs, a bit of sugar and flour and just a scosh of levening and flavoring. Easy to throw together on the fly. This cake bakes in just 7 minutes! Don't bake it one minute more because the cake will dry out and it will be difficult to roll and you will risk cracking.
Sadly cracking is a hazard of jelly roll making. If your cake cracks, fear not, simply fill it and roll with it. Cake and jelly are a magical thing. No one will even remember the crack after it has been enjoyed. I made my sponge and baked it and then as I was removing it from the pan it cracked. UGH! I was not happy! So off camera I went to make another sponge cake. I set them both to cool with the full intention of spreading Nutella on the cracked one and in my haste and excitement to get the video done, I unintentionally spread the good sponge cake with the camouflage Nutella. It was not until I had begun filming that I realized my boneheaded move. Alas, not everything is perfect in Noreen's Kitchen, as I am sure it is not in yours. So we spread jelly and rolled with it. Moved on and as it turned out the crack was encapsulated within the roll and nobody will ever know!
Life is a lot like a jelly roll. It has cracks. Sometimes you can hide them with jelly and sometimes you can't. You can choose to either moan about the cracks or you can simply embrace them! Life is too short to worry about such things. Embrace the cracks!
I hope this inspires you to brush off the retro recipes of your youth and make them for your family. Some of these things are fun touch stones to our past. They may have died out of popularity, but they are still worthy of our time and effort and definitely our enjoyment. Give this jelly roll a try and I hope you love it!

1950's Jelly Roll Cake
This is the cake I remember from the 1950's. Filled with raspberry jam, it's a treat that's not too sweet and filled with flavor.
