1/2 cup fine water-ground white cornmeal 1/4 teaspoon salt 2 1/2 teaspoons sugar 1/2 cup boiling water (about) milk (to thin batter -- if necessary) 3 tablespoons vegetable shortening In a medium bowl, combine corn meal, salt and sugar. Add boiling water and toss with a fork just to mix. There should be enough water just to dampen the ingredients so that no dry particles show. Next, add enough milk to thin the batter to the consistency you like. Heat 2 tablespoons of shortening in a heavy griddle over medium heat until hot. Drop a heaping tablespoonful of batter onto the griddle, reduce heat, and brown slowly, about 5 to 10 minutes a side, depending on thickness, until crispy and brown. Repeat until batter is gone. Transfer to paper towel lined plate. Serve warm.

Here is my improved recipe video for johnny cake! Many of you know that this is the good stuff back home on Sint Maarten! I hope I can help some of you guys to make it in the comfort of your own home, especially those living abroad. -------- Here's what you will need: 500 grams/2.1 cups of flour 1 tsp salt 3-4 Tbsps sugar 1 Tbsp baking powder 2 Tbsps melted butter 100 ml milk 130 ml water Extra flour for frying -------- Of course Johnny Cake goes well with a good filling. How to make the softest and fluffiest Johnny cakes/Bakes
2 pounds of all purpose flour 2tbs of sugar 2tbs of baking powder tsp of salt Warm water I recommend using baking powder vs baking soda And all purpose flour vs self rising flour Vegetable oil 1tbs of butter and baking powder per pound of flour. You can also add salt to the water of directly into the flour. Enjoy
