How To make Kai's Spinach Pie
2 pk Fresh spinach
1 pk Fresh mushrooms
1 lg Onion
5 Egg whites; or substitute
8 oz Fatfree cheddar cheese; grat
8 oz Fatfree mozzarella cheese; g
1 ts Pepper
1 Phyllo dough; *see note
Remove stems from spinach and wash. Cut onions and saute in water until tender. Wash and slice mushrooms and add to the onions (cook until all water evaporates). Remove onions & mushrooms from heat a put in a large bowl. Saute spinach in water tossing frequently until all liquid evaporates. Mix onions/mushrooms & spinach together in bowl & make sure onions and mushrooms are evenly distributed throughout the spinach. Beat egg whites lightly. Add grated cheese to egg mixture and mix thoroughly. Add spinach mixture to egg and cheese mixture and stir until mixed well. CRUST: The dough is paper thin and you use many layers. I use a rectangular glass baking dish, sprayed lightly with - PAM. Quickly layer 5-7 sheets on the bottom of the dish spraying each layer lightly with Pam. Then put half of your spinach mixture on top. Put another 5-7 sheets of Phyllo. Then the last of your spinach mixture. Top with 10 to 15 sheets of phyllo, sprayed lightly with Pam between each layer. Remove any excess dough around the edges. Moisten your fingertips and seal around the edges like a normal pie crust. Spray top lightly with Pam. Using a sharp knife cut through the top layer in the pattern you want. (ie: I cut rectangular pattern that is the size of the pieces I will ultimately cut.) In the Greek desert, Baklava they cut diamond shapes. Bake in 400-425 deg. F. oven for 30 min. WARNING: Phyllo dough is sooooo thin it is a little hard to work with because it dries out in about 2 seconds and sticks together. There are hints on the box on how to keep it moist. Use HEALTHY CHOICE FAT FREE grated cheeses. Their cheese is real cheese made with skim milk, it tastes and melts the same (at least in this recipe) as high fat cheeses which is not true for other brand name Fat Free Cheeses I have tried.

✔ Ingredients: (for 30cm baking tray - 12 pieces pie)
For the Homemade Phyllo (Filo) dough:
◾ 2 ½ cups strong Flour, divided (475g)
◾ 3/4 cup strong Flour for rolling the Phyllo (about 150g)
◾ 1 tsp Salt
◾ 1 Tbsp Vinegar
◾ 1 Tbsp Olive Oil (for the dough)
◾ ½ Tbsp Olive oil (for resting)
◾ 1 Tbsp fine Semolina flour (when assembling the Spanakopita pie)
◾ ¾ cup warm Water (230g)
◾ 20 Tbsp Olive Oil, for greasing the Phyllo sheets (about ¾ cup)
For the Spinach Filling:
◾ 500g Spinach, trimmed
◾ 100g 1 bunch of Chard (Sesculo) - Optional
◾ 3 Onions, finely chopped
◾ 10 Spring Onions, cut into rings
◾ 1 cup Dill, finely chopped (1 bunch)
◾ 170g Feta cheese, crumbled (Optional)
◾ 1 Τbsp fine Semolina Flour
◾ 4 Tbsp Olive Oil
◾ 2 pinches of Salt
◾ 2 pinches of Pepper

Tuna Spinach Pie Recipe / Tuna Pie
Ingredients:
1 cup small dice carrots
3 cans tuna
1 kilo frozen spinach slightly squeeze
1/4 cup cappers
1/4 cup olives
4 tbsp. tomato paste
1/2 cup tuna oil
1 cup onion
4 cloves garlic
1 tsp. oregano
1 tsp. salt
1/4 tsp. pepper
1 egg wash for the pie dough
Dough:
130 grams unsalted butter
1 tbsp. sugar
1/4 tsp. salt
80 ml cold water
2 1/2 cups all- purpose flour

SPIRAL SPANAKOPITA.
Authentic Greek delicious spinach pie. We added a modern twist and made spiral. Many cooks in different areas of Greece use this method for several pies. This is a healthy, quick and easy recipe. If you don't have a pizza stone just use a regular tray that you have oiled first.
If you want the regular spinach pie then follow the buttering/oiling process of the phyllo dough by spliting the packet in two and layering it on a deep tray as executed on this recipe or you can make TRIANGLES as executed on this recipe .
