Hi, I’m Katie Webster. I’m a classically trained chef and have been a professional recipe developer for 20 years. Healthy Seasonal Recipes is my food blog where I share really delicious real food recipes, seasonal side dishes and weeknight meals for busy families.

Greek Lemon Chicken and Orzo Casserole

Ingredients
Orzo:
3 cups chicken stock
3 tablespoons melted butter
2 teaspoons kosher salt
1 teaspoon cornstarch
2 sprigs fresh dill, chopped
2 lemons, zested and juiced
1 clove garlic, minced
2 cups orzo
Chicken:
2 teaspoons ground coriander
2 teaspoons kosher salt
2 teaspoons freshly ground black pepper
4 small to medium boneless, skinless chicken breasts
1 lemon, sliced into 1/4-inch-thick slices
1 tablespoon chopped fresh parsley
Directions
Preheat the oven to 375 degrees F.
For the orzo: Whisk together the stock, butter, salt, cornstarch, dill, lemon zest and juice and garlic in a bowl. Mix in the orzo.
For the chicken: In a separate bowl, mix together the coriander, salt and pepper. Coat the chicken all over with the seasoning.
Pour the stock/orzo mixture into a glass 9-by-13-inch baking dish. Add the chicken breasts, laying them at an angle so all but the tops of the breasts are submerged. Shingle the lemon slices in between the chicken breasts.
Bake, uncovered, until the chicken registers an internal temperature of 165 degrees F, 35 to 40 minutes. Let rest for 5 minutes. Top with the chopped parsley before serving.

Seven Layer Casserole Slow Cooker Recipe ~The Dinner Tag
This is one of our favorite slow cooker meals - 7 layer casserole.
Lots of veggies, rice, meat and sauce making a delicious one pot
meal. Easy and comforting. Wonderful meal. Enjoy

7 Layer Casserole Slow Cooker Recipe ~ Dinner Tag
INGREDIENTS:
1 1/2 pds ground beef
2 cups slice potatoes
1 cup sliced carrots
1 cup sliced onions
1/2 cup rinsed and drained uncooked rice
1 cup sliced bell pepper
1 cup corn
Sauce:
1 - 20 oz can tomato sauce
1 cup diced tomatoes
1/2 tsp salt and black pepper
1 clove minced garlic
Layer the 7 ingredients in your slow
cooker. Spread the sauce half way
and over the top.
Cook on low for 8 hours or on high
for 4 hours.
Serve with bread and salad.
Enjoy.

KETO Loaded Cauliflower Casserole
INGREDIENTS
8 Slices of Bacon
1 large Cauliflower Head
1/2 Cup Sour Cream
1/2 Cup Mayonnaise
1 Tbsp Dried Parsley
1 tsp Dill
1 tsp Garlic Powder
1 tsp Onion Powder
1/4 tsp Dried Basil
1/4 tsp Pepper
1/2 tsp Salt
2 Cups Cheddar Cheese
5 Tbsp Chopped Green Onion
DIRECTIONS
Preheat oven to 350 Degrees Fahrenheit, and grease a baking dish.
Fry bacon in skillet until crispy and crumble. Set aside
Steam cauliflower until tender about 15 minutes, then chop up.
In a large mixing bowl, mix sour cream, mayonnaise, and spices.
Add cauliflower, 1/2 the bacon and 1/2 the cheddar cheese to sour cream mixture and combine well. Add in 3 Tbsp chopped green onions and mix.
Transfer to greased baking dish and top with remaining bacon and cheese.
Cover with foil and bake for 25-30 minutes. Remove foil and bake for an additional 5-10 minutes.
Remove from oven and garnish with remaining green onions and serve!
