Of all the key lime pie recipes I've made, this is by far my favorite, and that of my friends also. It's also one of the easiest. In a bowl, combine the lime juice and condensed milk. In a separate bowl, whip the cream til it forms stiff peaks.You might want to add a little pwdr sugar if the key limes are too tart for you, Fold the whipped cream into the lime juice and condensed milk mixture. This refreshing Key lime pie is tart and sweet with the perfect creamy texture. Key lime pie is not only delicious but super easy to make.
Ingredients (Makes one 9-inch (23 cm) pie)
-Crust
Graham Crackers 12 whole crackers | 170 g
(About 1 ½ cups of crumbs)
Sugar ¼ cup | 50 g
Butter 6 Tablespoons | 84 g
-Filling
Sweetened Condensed Milk 28 oz | 794 g
Sour Cream ½ cup | 120 g
Lime Zest 1 tablespoon | 5 g
Lime Juice ¾ cup | 180 mL
-Whipped Cream Topping (Optional)
Heavy Cream ¾ cup | 180 mL
Powdered Sugar 3 tablespoons | 23 g
Directions
1. Crush crackers into fine crumbs. Combine graham cracker crumbs, sugar and melted butter until evenly moistened. Press mixture into bottom and sides of a greased 9-inch pie plate to form crust.
2. Bake crust in a preheated 350º F (178º C) oven for 8-10 minutes or until crust begins to brown. Cool while preparing the filling.
3. Combine sweetened condensed milk and sour cream; stir in lime juice and zest until incorporated and mixture thickens. Pour over cooled crust.
4. Bake in a preheated 350º F (178º C) oven for 10-12 minutes or until the filling is set with a slight jiggle in the center. Chill thoroughly.
5. To make the whipped cream, whip heavy cream and powdered sugar on medium speed until the mixture begins to thicken. Increase speed to high and continue whipping until medium peaks if spooning over pie or stiff peaks if piping decorations.

These key lime pie bars are bound to become your new favorite dessert. The smooth and creamy filling is a perfect balance of tartness and sweetness. Each bite has a subtle crunch from the graham cracker crust that goes so well with the refreshingly delicious filling - making this the perfect key lime pie bar recipe.
You’ll need:
• 1 ½ cup or 12 full sheets graham crackers (crushed)
• 6 tbsp salted butter (melted & cooled)
• 2 cans 14 oz. sweetened condensed milk
• 4 oz. cream cheese (room temperature)
• 2/3 cup key lime juice (16 -18 key limes) + 1 tbsp zest (3-4 key limes)
Makes 16 creamy delicious bars
* Using a 9x 9 square baking pan in the video
:: HELPFUL HINTS:
* Make sure cream cheese is at room temperature before baking to ensure a smoother batter.
* When key limes are not available or convenient, one can use 100% key lime juice in a bottle (available at most grocery stores)
* Avoid cracks and center shrinkage: Use all ingredients at room temperature. Place pan at the middle rack of the oven. Cool completely at room temperature before chilling.
* Get the perfect cut: Wipe the knife clean before every cut.
* Best time to cut & serve: Let it cool completely before chilling. It is best to chill bars at least 2 hours or overnight before slicing/serving.
