How To make Key Lime Pie (Low Fat)

teaspoon
cream of tartar

teaspoon
vanilla extract

Directions:
To Make Crust: Preheat oven to 350 degrees. Spray a 9 inch pie plate with nonstick cooking spray. In a medium sized bowl, beat egg white lightly with a fork until frothy. Add graham cracker crumbs, butter and oil and blend with your fingertips until thoroughly combined. Press the mixture in an even layer on the bottom and sides of the pie plate. Bake for 10 minutes, or until lightly browned. (Do not be concerned if there are small cracks.) Cool on a rack.
To Make Filling: In a medium-sized metal bowl, whisk together milk, yogurt, lime juice and zest. In a small saucepan, sprinkle gelatin over 2 tbs. cold water. Let soften for 1 minute. Heat over low heat, stirring, until the gelatin is dissolved. Whisk into the lime mixture. Set the bowl over a larger bowl of ice water, stirring occasionally, until it begins to thicken, 15 - 20 minutes. Turn into the pie shell and chill in the refrigerator while you prepare the meringue.
To Make meringue: Preheat the broiler. In a small saucepan, combine sugar with 1/2 cup water. Bring to a boil, stirring occasionally. Cook over medium-high heat, without stirring, until syrup registers 240 degrees F and is at the soft-ball stage (when a bit of syrup dropped into ice water forms a pliable ball) about 5 minutes. Remove syrup from heat. Set aside. In a large mixing bowl, beat egg whites with an electric mixer on medium speed until frothy. Add cream of tartar and beat on hight speed just until soft peaks form. Return the syrup to the heat until it boils. Gradually pour hot syruup into egg whites but not directly onto the beaters, beating constantly. Continue beating until egg whites are cool and very stiff, about 5 minutes. Blend in vanilla. Remove the pie from the refrigerator and spread the meringue over the top, sealing to the edge of the crust and swirling roughly on top. Place the pie under the broiler for 1-2 minutes, or until lightly browned. Let cool to room temperature, the refrigerate until the filling has set, for 5-8 hours. Garnish with fresh lime slices just before serving.

Best you Ever Had Key Lime Pie Recipe Easy - No Added Sugar
This is the best key lime pie recipe I have ever tried. It is very easy and quick. NO sugar added - I do not any extra sugar as the condensed milk itself is very sweet and there is no need for any more sweetness. You can serve it with whipped cream or meringue but for me, it is so good it just does not need anything else

- 28 oz sweetened condensed milk (2 cans)
- 1 cup of freshly squeezed lime juice
- lime zest - optional
- 2 eggs
CRUST
- 1.5 cup cookies Graham or similar, I used Goya Maria cookies, you can buy them here:
- 4 tbs melted butter
CRUST: bake at 375 F for 15 minutes and cool
Custard: bake it 325 F for 15 minutes and cool, refrigerate for at least 2 hours

INGREDIENTS:
Crust:
2 1/2 cups graham crumbs (390g)
1/2 cup melted unsalted butter
Filling:
3 packages full fat cream cheese room temperature (24oz/750g)
1 1/2 cups powdered sugar (200 grams)
1/4 cup key lime or lime juice (2 limes)
1-2 tablespoon key lime or lime zest (2 regular limes) Depending on your tastes
1 teaspoon vanilla
3/4 cup heavy whipping cream cold, 30-35% fat ONLY
INSTRUCTIONS:
Combine graham crumbs and butter and press firmly into the bottom of an 8″ or 9″ springform pan and about 1″ up the sides.
In a large bowl, beat cream cheese with an electric mixer until smooth.
Add 1 1/2 cups sugar, lime juice, lime zest and vanilla and beat until smooth.
Whip the cream in a separate bowl with an electric mixer until stiff peaks form. Fold the whipped cream into the cream cheese mixture carefully so you do not deflate it. Taste and adjust the sweetness if necessary.
Spread into prepared pan, cover and refrigerate for at least 5-6 hours or until firm. Slice and serve with sweetened whipped cream as desired.

KETO KEY LIME PIE
Serves: 8
Keto Sweetened Condensed Milk
3 tablespoons unsalted butter
1/2 cup powdered sugar-free sweetener
16 oz (2 cups) heavy whipping cream
Key Lime Filling
4 teaspoons lime zest
4 egg yolks
1/2 cup lime juice (from 4 limes or 20 key limes)
Pie Crust
1 cup almond flour
3 tablespoons coconut flour
1 teaspoon xanthan gum
1/2 teaspoon salt
1/2 cup unsalted butter, chilled and cubed
1 ounce cream cheese, softened
1 egg
1 1/2 teaspoons rice vinegar or apple cider vinegar
Keto Whipped Cream
1/2 cup heavy cream
2 tablespoons powdered sugar free sweetener
1️⃣ 00:55 - Make Keto Sweetened Condensed Milk
To a medium saucepan, add butter, powdered sugar free sweetener and heavy cream. Bring to boil over medium heat. Reduce heat and let simmer for 30 minutes to thicken. Remove from heat and pour into a mason jar or similar container. Let cool at room temperature for about 30 minutes before transferring in the refrigerator for 2 hours.
2️⃣ 01:58 - Prepare Key Lime Filling
In a medium glass bowl, whisk together lime zest with egg yolks. Whisk for about 2 minutes. Add sweetened condensed milk prepared earlier and stir until smooth. Stirring by hand with a whisk, very slowly stir lime juice into the filling mixture. Set aside for 30 minutes to thicken slightly. Move onto the pie crust.
3️⃣ 04:01 - Make Keto Pie Crust
To a food processer, pulse together almond flour, coconut flour, xanthan gum and salt. Add in cubed butter, cream cheese, egg and vinegar. Pulse until just combined.
4️⃣ 04:46 - Bake the Crust
Roll out pie crust in between two sheets of parchment paper until the crust is a large circle about 1/8 - 1/4 inch thick. Refrigerate dough for 15 minutes. Remove the top layer of parchment paper and place pie plate upside down over the dough. Slide a hand under the bottom layer of parchment paper, place other hand on top of pie plate and flip over. Remove the parchment paper and press the pie dough into the pie pan. Bake at 350 degrees for 8 minutes. Lower heat to 325 degrees and let cool for about 20 minutes.
5️⃣ 05:29 - Assembled Pie
Pour lime filling into cooked and cooled pie crust. Bake at 325 degrees for 15-20 minutes. Bake until edges are slightly set but the center jiggles like jello. Refrigerate for 2-3 hours or until set.
6️⃣ 05:56 - Make Whipped Cream
In a small bowl, add heavy cream and powdered sweetener. Beat with an electric mixer until stiff peaks form. Top on key lime pie. Top pie with additional lime zest if desired.
