How To Make Proper Chili Oil (Chinese Style)
Chili Oil is great on dumplings and all. But there is a massive difference between from scratch homemade chili oil, and store bought. When I say massive, I mean MASSIVE. This stuff is so easy to make and really only takes a few minutes of active time. So if you're not making your own chili oil at home yet, it's time to start. And keep that bad boy stocked up
(Heads up I know these spices are a tiny bit pricey, but each of these comes with a lot of spices so you can use them for a multitude of batches as well as lots of other things)

Ingredients you'll need:
1 quart neutral oil (canola, peanut, etc.) *scroll to the bottom for notes
5 star anise
4 cloves garlic bruised left in their skins
2 tablespoons (10g) coriander seeds
1 cinnamon stick
1/3 cup (20g) Sichuan peppercorns
4 black cardamom
1 cup (110g) Sichuan chili flakes (or asian red pepper flakes)
1.5 teaspoon (10g) fine sea salt
1 tablespoon (14g) black vinegar

Shopping List:
2.25 lbs Ground Beef (80/20 or 85/15)
4 cloves minced garlic
1 diced onion
2 large jalapenos
1/2 red bell pepper
1/2 green bell pepper
3-4 slices of thick cut bacon (optional)
4 oz black beans
15 oz kidney beans
smoked paprika, ancho chile powder, chipotle chile powder (to taste 1/4 tsp or so)
cinnamon sugar (to taste)
salt, pepper, garlic, onion powder
6-8 oz mexican beer or chicken stock
1 tbsp better than bouillon chicken or beef base
2 tbsp tomato paste
worcestershire sauce & hot sauce (to taste)
14oz can crushed tomatoes
8oz can tomato soup
14oz fire roasted diced tomatoes
3 dashes of liquid smoke
2-3 tbsp brown sugar (if needed)
Cayenne pepper (as needed for heat)
Directions:
Start by adding a bit of cooking oil and your 3 slices of thick cut bacon. Once bacon begins to get crispy, remove it and add the ground meat directly to the pot. Once browned, begin adding your seasonings as seen in the video. Next, add in your diced veggies and mix to incorporate. Deglaze the pot with your beer or chicken stock. Bring to a boil and then reduce to a simmer. Begin adding in your tomato products and beans and cover to simmer for 30-60 minutes stirring occasionally (do not let anything stick to the bottom and burn! heat should be on low) Taste for seasoning and add whatever you feel it needs (more spice - add cayenne or hot sauce... add brown sugar or cinnamon sugar to sweeten if desired) Total cook time should be around 2 hours to allow all of the flavors to come together. Serve with your favorite chili toppings and enjoy!

Today l show you how l like to make my chilli , for those times you need some for nachos, a dip, or just for shovelling down your throat for no real reason at all! And this one is beanless for all those fussy people :)
Ingredients:
1 onion
4 cloves of garlic
500grams beef mince (1 lb)
1 tablespoon chilli powder
1 tablespoon chilli flakes
1 teaspoon cumin
1 tablespoon paprika
1 cup beef stock
1 tin diced tomatoes
1 teaspoon oregano
1 tablespoon sugar
salt and pepper

This Chili Recipe is truly an award winning chili recipe because it has won me 1st place two years in a row in chili cook off competitions at my work This chili recipe beat out 12 people in the 2011 chili cook off. I used the exact same recipe in 2012 and beat out 8 other peoples chili recipes in that chili cook off.
Here's the Award Winning Chili Recipe:
I've omitted the taco seasoning. It's not necessary.
Ingredients:
- 1 lb of hamburger
- 1 lb of pork sausage
- 1 can of Rotel
- 1 can of kidney beans
- 2 cans of chili beans
- 1 jar of chili sauce (12 ounces)
- 1 jar of medium salsa (or homemade if you prefer)
- 1 medium onion chopped
- 1 green pepper chopped
- 1 Tbl mince garlic
- 3 Tbl chili powder
- 1 Tbl Cumin
- 1 Tbl black pepper
- 1 Tbl salt (or to taste)
- 1/2 Tbl tabasco (or to taste)
Directions:
Brown Hamburger, add to crock pot.
Brown sausage, add to crock pot.
Saute onion and green pepper, add to crock pot.
Add all of the remaining ingredients to the crock pot. Cook for 2 hours or longer (longer is better).
Serve with chopped onions, sour cream, shredded cheddar cheese, or whatever else you like.
