How To make Legumes In Garlic & Onions
2 c Pigeon peas, soaked, 20 mins
1 qt Water
1/2 ts Turmeric
Salt 1/4 c Oil
1 tb Black mustard seeds
2 ts Cumin seeds
1 md Onion, finely chopped
6 Garlic cloves, chopped
1/2 ts Dried red chilies
Wash pigeon peas & boil them with the water & turmeric & salt for 20 minutes. Heat oil in medium pot, add mustard & cumin seeds & fry until mustard seeds start to pop. Stir in onion & garlic & fry till browned & & soft. Mix in ground chili & stir for 30 seconds. Remove & pour over peas. Stir thoroughly, cover & simmer for 10 minutes, stirring occasionally. Serve hot with plain rice. Rani, "Feast of India"

1 pound green beans, trimmed
1 tablespoon olive oil
2 cloves garlic, chopped
1/2 teaspoon red pepper flakes
1 teaspoon black pepper
Salt, to taste
2 tablespoons water
Instructions:
Heat a skillet over medium-high heat and add 1 tablespoon of olive oil.
Once the skillet is hot, add the trimmed green beans and sprinkle with salt.
Cook the green beans for about 4 minutes, until they are seared and have blistered spots.
Add 2 cloves of chopped garlic, 1/2 teaspoon of red pepper flakes, and 1 teaspoon of black pepper to the skillet.
Cook the green beans for another 4 minutes, until the garlic is fragrant and the beans are crisp-tender.
Add 2 tablespoons of water to the skillet and cook for an additional 5 minutes, until the water has evaporated and the beans are perfectly tender.
Serve hot and enjoy!
