You’ll love these crisp apple fritters covered in glaze and chock full of apples. They’re an easy to make, basically foolproof treat you can whip up in a snap! It’s SO much easier to make than a donut since there’s no yeast, no rising, no waiting. Just mix it up, fry away, and enjoy!

My fritters have a touch of lemon inside and in the glaze to wake the flavors up but you can also roll in cinnamon sugar if that’s your jam.

Lemon Cheese Fritters

Delightfully moist lemony pancakes inspired by traditional European cheese fritter.
SERVINGS: 2 dozen fritters
INGREDIENTS:
1 cup All Purpose Flour
2 tbsp Icing Sugar
1/2 tsp Baking soda
1/4 tsp Salt
3 cups GAY LEA - Nordica Smooth - Lemon
1 Egg
3 tbsp GAY LEA - Spreadables Regular
Icing sugar and fresh berries (optional)
INSTRUCTIONS:
Stir flour with icing sugar, salt and baking soda until combined. Blend in Smooth cottage cheese and egg until a thick batter forms.
Heat 1 tbsp (15 mL) Spreadables butter in a large nonstick skillet set over medium heat.
Drop by well-rounded spoonfuls. Flatten slightly with a spatula. Fry for 2 minutes per side or until golden.
Repeat with remaining batter, adding extra butter to skillet between batches as needed. Serve warm, dusted with icing sugar and garnished with fresh berries.
TIPS:
Make fritters ahead and reheat, in a single layer, on a baking sheet at 350°F (180°C) for 5 to 8 minutes, or until warmed through.
Replace the Smooth Lemon with Smooth Vanilla Bean flavour.
Serve the fritters topped with warmed raspberry, blueberry or cherry preserves.
Peach Fritters with Lemon Glaze | पीच फ्रीटर्स विथ लेमन ग्लेझ | Sanjeev Kapoor Khazana
Let’s make a simple and easy fresh seasonal peach fritters made with simple ingredients and shallow fried till golden brown and crisp. Served with a tangy, sweet, and fragrant lemon glaze.
PEACH FRITTERS WITH LEMON GLAZE
Ingredients
3 medium fresh peaches
½ cup icing sugar
1 lemon
1½ tbsps lemon juice
¾ cup milk
1 tsp white vinegar
1 cup refined flour (maida)
2 tbsps corn flour
1 tsp baking powder
A pinch of salt
2 tbsps castor sugar
2 tbsps roughly chopped walnuts
½ tsp vanilla essence
2 tbsps melted butter
Oil for shallow frying
Fresh mint leaves for garnish
Method
1. Take icing sugar in a bowl. Zest lemon directly in the bowl. Add lemon juice and mix well.
2. Take milk in a small jug. Add vinegar and set aside for 10 minutes.
3. Peel, deseed and roughly chop peaches.
4. Sift refined flour, corn flour, baking powder and salt in a bowl. Add castor sugar, milk-vinegar mixture and whisk well.
5. Add peaches, walnuts, vanilla essence and mix well.
6. Add melted butter and mix well.
7. Heat sufficient oil in a shallow non-stick frying pan. Drop small portions of the prepared peach mixture and spread lightly.
8. Shallow fry till crisp. Drain on absorbent paper.
9. Transfer on a serving plate, drizzle the prepared glaze, garnish with mint leaves and serve warm.
