Soft and Chewy Lemon Sugar Cookies

This easy lemon sugar cookie is bursting with refreshingly light lemon flavor housed in a soft and chewy cookie texture. It’s basically a marriage between a classic sugar cookie and a tangy lemon. It’s a simple crowd-pleaser sugar cookie recipe that everyone will love on holidays or enjoyed all year long.
You’ll need:
• 1 1/3 cup (166g) all-purpose flour (*see notes below)
• ½ tsp baking powder
• ¼ tsp baking soda
• ½ cup (112g) salted butter (room temperature)
• ¾ cup (150g) white sugar + ¼ cup (50g) more for coating
• 1 tbsp light brown sugar
• 1 egg yolk (from large egg)
• 1 tbsp lemon zest (2-3 large lemons) or 1 ½ tsp lemon extract
• 1 tsp fresh lemon juice
Makes 16 delicious cookies
:: HELPFUL HINTS ::
* Measure your flour correctly (spoon & level method). Adding too much flour will result to dry and crumbly texture of cookies when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level it off.
* Let the cookie rest in the baking pan for 5-10 minutes. Transfer to wire rack to finish cooling.

Lemon Cookies
Ingredients:
1/2 Cup salted butter (softened to room temperature)
1/3 Cup powdered sugar
1 Teaspoon lemon zest
1 Cup all purpose flour
Directions:
Preheat oven to 350F/175C. Line cookie sheets with parchment paper (optional). In the bowl of a stand mixer, or in a large bowl if using a hand mixer cream butter until smooth. Add powdered sugar and mix on low for 2 minutes. Zest 1 large lemon, this should give you about a teaspoon of zest. Add this into your bowl and mix on low until incorporated. Add in the flour and mix on low until the dough comes together. Lightly flour your rolling surface, form the dough into a disc and lightly flour the top. Roll to 1/4 Inch thickness and cut cookies using a 3 inch cutter. Re roll and cut your scraps as needed. You should get 12 cookies. Place on prepared cookie sheets and bake 10-12 minutes or until the bottoms are just beginning to brown. Let cool on the pan for a few minutes, then move to a wire rack to finish cooling. Dip cooled cookies in lemon icing and allow 2 hours to set.
Lemon Icing
Ingredients:
2 Tablespoons fresh lemon juice
1 Cup powdered sugar
Directions:
Combine fresh lemon juice and powdered sugar in a small bowl. Whisk until smooth. If too thin, add a little bit more powdered sugar. If too thick, add a bit more lemon juice. Dip tops of cookies, let set and enjoy!

Ingredients:
1/2 cup (115g) Butter, softened
3/4 (150g) Sugar
1 Egg
1 teaspoon Vanilla extract
1 tablespoon Lemon zest
2 tablespoons Lemon juice
1½ (190g) All-purpose flour
1 teaspoon Baking powder
1/4 teaspoon Salt
Powdered sugar for coating
Directions:
1. In a large bowl place softened butter and sugar, beat until creamy.
2. Add the egg and beat until combined. Add lemon zest, lemon juice, vanilla extract and beat until combined.
3. Sift in flour, baking powder and salt. Fold until combined and soft dough is formed (at this stage you also can add yellow gel food coloring). Cover and refrigerate for 1 hour.
4. Preheat oven to 350F (180C).
5. Take the dough out of the fridge and shape into small balls. Cover each ball with powdered sugar and arrange them on a baking tray, leaving 2-inches apart.
6. Bake for 10-12 minutes.
7. Allow the cookies to cool for 5 minutes before transferring to a cooling rack.

No chill Lemon sugar cookies | 12 days of EASY Christmas cookies (Day 8)
Follow along with our easy lemon sugar cookie recipe and learn how to make these simple and delicious lemon glazed sugar cookies! This easy lemon sugar cookie recipe is by far my most requested Christmas cookie recipe! The easy 2 ingredient lemon icing gives a nice tangy flavour to these simple but delicious soft sugar cookies. Unlike most rolled sugar cookie recipes, these cookies require no chilling, significantly reducing the preparation time! These easy Christmas cookies can also be made ahead of time and frozen for up to 2 months. (My freezer is full of 100’s of unbaked Christmas cookies, ready to bake when needed.)
No chill sugar cookies recipe:
Ingredients:
3 cups all purpose flour (400g)
1/2 tablespoon baking powder (9 g)
1/4 teaspoon fine sea salt (1 g)
1 cup softened butter (226 g)
1 cup granulated white sugar (200g)
1 large room temperature egg
1 teaspoon vanilla extract
icing (recipe below - optional)
sprinkles (optional)
Directions:
Preheat oven to 350F/175C. Line cookie sheets with parchment paper. In a medium or large bowl combine flour, baking soda and salt. Whisk to combine. In the bowl of a stand mixer, or a large bowl if using a hand mixer combine butter and sugar. Cream on low for 3-5 minutes, until its nice and light in both texture and colour. Add egg and vanilla and continue mixing on low until everything is well incorporated and the mixture is airy. Gradually add in the dry ingredients, mixing on low. Form the dough into 3 equal discs. Lightly flour your work surface, and the top of the dough and roll to 1/4 inch thickness. Use a cutter to cut your shapes. I used a 3 inch star cutter. Place onto parchment lined sheets and bake for 6-8 minutes, removing as soon as the bottoms begin to brown. Move to a wire rack to cool, and make the lemon icing(recipe below).
Easy lemon icing recipe: (Full batch)
Ingredients:
2 tablespoons lemon juice
1 cup powdered sugar (120 g)
Directions:
In a small bowl combine lemon juice and powdered sugar whisking until smooth. Dip the tops of your cookies into the icing, top with sprinkle and allow to set for 4 hours.
This recipe will make 24-48 cookies depending on the thickness of your dough and size of your cutter. I got 32 cookies. These cookies can also be frozen, directions are below! If freezing baked cookies do not ice before freezing.
Freezing instructions:
a. You can freeze your baked cookies in a freezer tight bag or container for up to 30 days. Allow to thaw for 1 hour. Top with lemon icing.
b. Freeze your unbaked cookie dough cutouts. Place on a pan or plate and freeze for 30 minutes. Transfer to a freezer tight bag or container. These can be frozen for up to 3 months. Remove from the freezer 30 minutes before baking. Bake as indicated above.
