With tender, juicy patties of beef studded with onions and draped in a mushroom pan-gravy, this classic comfort food is brimming with umami. Served on a bed of rice, with a sunny side up egg and some fried shallots, the mixture of tastes, textures, and flavors is insanely satisfying. Because my gravy is thickened with potato starch, it doesn’t seize up or get gummy, which makes this a great bento box entree. LOCO MOCO WITH MUSHROOM GRAVY
Makes 2 servings
BURGER INGREDIENTS
60 grams onions (~ 1/2 onion minced)
225 grams ground beef
16 grams panko (1/3 cup)
2 tablespoons milk
2 teaspoons oyster sauce
1/4 teaspoon black pepper
2 teaspoons vegetable oil
GRAVY INGREDIENTS
70 grams button mushrooms (7 small mushrooms)
70 grams onions (~1/2 onion, finely diced)
1/2 tablespoon rum (optional)
3/4 cup low-sodium beef stock
1 1/2 tablespoons soy sauce
1/2 teaspoon Worcestershire sauce
2 teaspoons potato starch
1 tablespoon cream

BEST LOCO MOCO RECIPE!! | Hawaiian Food | Chef Tips
Hey guys! Just returned from Maui and had to share this awesome Hawaiian Loco Moco recipe that I recreated from our visit to Roy Yamaguchi’s Humble Market Kitchin.
This easy recipe for Loco Moco just requires eggs, gravy, rice and a burger. You can make this as easy or as gourmet as you like. Feel free to use a packaged beef gravy to pull this together quickly!
Loco Moco Meaning: From what I’ve learned, Loco means crazy and Moco just rhymed. According to legend, the dish was invented in 1949 when some surfers down on their dollars needed some cheap eats. They found it in Hilo at the Lincoln Grill, where they dug in to a dish of beef, rice, eggs and gravy.

Loco Moco Easy Recipe:
This makes 2 big servings, or 4 normal servings
4 eggs
2 cups precooked rice
1 lb of 30% fat ground beef
Salt and pepper
Chives, as needed
10 cherry or grape tomatoes
Loco Moco Gravy (Mushroom Sauce):
8 oz crimini mushrooms
2 cups beef stock
1/2 cup red wine (optional)
3 Tb. butter
Dash of olive oil
1 Tsp garlic shallot puree
Roux as needed: See my video at
How to Make Loco Moco Gravy: Saute mushrooms in butter and olive oil in pan over medium high heat. Once cooked down, add 1 tsp of garlic shallot puree. Cook for one minute. Add wine and reduce by half. Add beef stock and bring to boil. Once it's boiling, add roux to thicken, stirring the whole time to avoid lumps.
To make the Loco Moco Burgers: Form the ground beef into two patties. Season with salt and pepper and grill to your liking.
To prepare the grape tomatoes: Toss with salt and pepper and a little olive oil. Grill on the upper shelf of your BBQ while cooking the burgers, or saute in a pan until softened.
Eggs: Cook sunny side up in an 8-inch omelet pan with a dab of butter to start.
Assemble: Add precooked rice on plate. Top with burger patty, add mushroom gravy, top with eggs and then salt/pepper and chives. Place tomatoes on the side and enjoy!

Hawaiian Loco Moco Recipe
A Loco moco is the perfect weeknight 30-minute meal with a tasty cooked hamburger patty stacked high over rice with a delicious mushroom sauce and a fried egg. This Hawaiian comfort food will be a sure-fire family favorite!
Ingredients for this recipe:
• 1/2 peeled small diced sweet onion
• 2 finely minced cloves of garlic
• 2 pounds 80/20 ground beef
• 2 tablespoons soy sauce
• 2 teaspoons Worcestershire sauce
• 2 tablespoons oil
• 8 ounces sliced cremini mushrooms
• 3 tablespoons all-purpose flour
• 2 cups beef stock
• 5 eggs
• 5 cups cooked jasmine rice
• ¼ cups slice green onions
• sea salt and fresh cracked pepper to taste
Serves 5
Prep Time: 5 minutes
Cook Time: 25 minutes
Procedures:
1. Add the onion, garlic, beef, 1 tablespoon of soy sauce and Worcestershire sauce to a large bowl and mix until completely combined. Form into 5 patties and season on both sides with salt and pepper and set on a plate.
2. Add the oil to a very large frying pan over medium heat and once it begins to lightly smoke add the hamburger patties in and cook for 3-4 minutes per side or until well browned on each side. See doneness note.
3. Set the hamburger aside and drain off ½ of the oil used to cook the ground beef into a small frying pan and set the small pan aside.
4. In the large frying pan over medium heat add in the mushrooms and cook for 3 to 4 minute or until lightly browned.
5. Add in the flour and stir it in until it is completely combined,
6. Pour in the beef stock and cook for 3-4 more minutes over medium heat until it becomes thick like gravy.
7. Add back in the cooked meat patties and simmer over low heat.
8. Fry the eggs 1 at a time in the small frying pan in the rendered meat fat over medium heat for 30 seconds for a sunny side up egg.
9. Serve the beef patties and mushroom sauce over top of the cooked jasmine rice and top off with the fried egg and garnish with sliced green onions.
CHEF NOTES:
Make Ahead – You can make this recipe up to 2 hours ahead of time, simply keep the hamburger patties into the gravy while covered in a very low simmering heat. Likewise keep the rice warm.
How to Reheat – Add the desired amount of beef and gravy to a saucepan and heat over low heat until hot.
How to Store - Keep the meat and gravy separate from the rice, and cover and keep in the refrigerator for up to 5 days. Do the same and keep in the freezer for up to 2 months.
If the sauce is not to your desired thickness before adding in the cooked patties, simply add in a little slurry (2 tablespoons corn starch mixed with 1 tablespoon water).
Since there was a lot of oil in the pan after cooking the hamburger patties, I drained half of it into a small skillet and used it to fry the egg.
The meat patties do not need to be fully cooked through when browning them before removing them from the pan to make the gravy.
Cook the fried egg to your desired amount of doneness. It is recommended that the yolk be runny.
How to Make a Classic Loco Moco – Updated
One of Hawaii’s classic dish is loco moco. Everyone and their dog has come across this simple and filling dish. Basically it is rice, hamburger patty, gravy, and an egg. Boom! 2 tbsp unsalted butter
1/2 medium sized sweet onion (optional)
3/4 cup sliced mushroom (optional)
Green onions
Cooked white rice
Patties:
1 1/2 lb ground beef
1 tbsp Worcestershire sauce
1 1/2 tsp seasoning salt
1 tsp garlic powder
1/2 tsp black pepper
Gravy:
1 1/2 cup beef stock
4 tsp shoyu (soy sauce)
1 tsp Worcestershire sauce
2 tsp ketchup
5 tsp cornstarch
