How To make Longjohns
FOR THE BATTER:
1/2 c SHORTENING
1 c BOILING WATER
1 c EVAPORATED MILK
1/2 ts LEMON EXtrACT
3 pk YEAST
1/2 c WARM WATER
2 ea EGGS, BEATEN
1/2 ts NUTMEG
1/2 c SUGAR
2 ts SALT
9 c FLOUR
1 ea OIL FOR FRYING
FOR THE FROSTING:
1/2 c BUTTER
1/2 c LIGHT brOWN SUGAR
3 tb HEAVY CREAM
3/4 ts MAPLE FLAVORING
1 ea POWDERED SUGAR AS NEEDED
COMBINE SHORTENING AND BOILING WATER. STIR IN MILK AND LEMON FLAVORING. DISSOLVE THE YEAST IN 1/2 CUP WARM WATER. WHEN SHORTENING MIXTURE IS LUKEWARM ADD IN YEAST MIX. ADD REMAINING INGREDIENTS, ADDING JUST ENOUGH FLOUR TO MAKE A SOFT DOUGH THAT CAN BE KNEADED. KNEAD FOR 5 MINUTES. COVER DOUGH AND LET REST FOR 10 MINUTES. ROLL OUT TO 1/4 INCH THICKNESS. CUT INTO 6" X 1" StrIPS. COVER WITH TEA TOWEL AND LET RISE FOR 1
HOUR. HEAT OIL TO 375 DEG F. SLIP RAISED SIDE OF DOUGH INTO OIL AND THEN TURN OVER, COOKING BOTH SIDES UNTIL LIGHTLY brOWNED. DRAIN ON PAPER TOWELS, THEN FROST. FOR THE ICING, BOIL THE BUTTER, brOWN SUGAR, AND CREAM IN A SMALL PAN FOR THREE MINUTES. ADD FLAVORING, THEN ENOUGH POWDERED SUGAR TO MAKE SPREADING EASY. ENJOY!

Ingredients Needed:
Dough:
- 1.5 cups (360ml) whole milk
- 1 tablespoon (11g) instant yeast
- 1/3 cup (74g) sugar
- 2 eggs
- 1 egg yolk
- 4.5 cups (675g) all-purpose flour
- 1 teaspoon (6g) fine sea salt
- 1/2 cup (115g) unsalted butter, room temp
- 2g amylase *OPTIONAL*
- Vegetable oil for frying (at least 2 quarts)
Plain Glazed:
- 5 cups (641g) confectioners sugar
- 1/4-1/2cup (59g-118g) hot tap water
- 1 teaspoon (4g) vanilla extract (optional)
Cereal donuts:
- 1/2 cup milk - 120ml
- 1/2 cup cereal of choice, rough crushed plus more for topping
- Cornflakes - 13g
- Fruity pebbles - 22g
- Frosted Flakes - 13g
- Reeses Puffs - 20g
- 2 cups (248g) powdered sugar
- small pinch salt
Peanut Butter puff variation:
- 1/4 cup (39g) milk
- 4.5 tablespoons (24g) cocoa powder
- 2 cups (248g) powdered sugar
- 1 cup (123g) cocoa puffs for topping
Peanut Butter Glaze Drizzle for the finisher:
- 3 tablespoons (64g) peanut butter
- 1/2 cup (47g) powdered sugar

Homemade Chocolate Long John Donuts Recipe || The Perfect Donut Recipe
I really hope you try this donut recipe. You can shape them however you like but I shaped them into bars.

Original Recipe
1/2 cup warm water
3/4 cup warm milk
2 tsp dry active yeast
1/2 cup + 1 Tbsp cup granulated sugar
1/2 tsp salt
5 large eggs
1/2 cup unsalted butter
5 1/2 cups all-purpose flour
Instructions
Combine 1/2 cup warm water , 3/4 cup warm milk along with 1 tbsp sugar and 2 tsp yeast. Give it a quick whisk and wait till it gets foamy. About 10 minutes.
In the bowl of a stand mixer add 5 1/2 cups of flour, 1/2 tsp salt 1/2 cup sugar, the frothy yeast mixture, and 5 large eggs. Using the hook attachment, mix everything together on medium-high speed.
When the donut dough begins to come together add 1/2 cup of softened unsalted butter. Continue mixing on medium-high speed for about 8 minutes or until the dough becomes smooth and elastic and no longer sticks to the sides of the stand mixer.
Let the dough rise
Place the donut dough in a greased bowl and cover with a kitchen towel or plastic wrap. Then let it rise in a warm place for about 1 hour, or until it doubles in size.
Punch and proof a second time
After the dough rises punch it down, reshape it, and let it rise again until it becomes twice the size (about an hour),
Roll, cut, and proof the donuts again
Now remove the dough from the bowl and place it on a well-floured surface. Dust some more flour on top and roll it out using a rolling pin. You want the dough to be about a 3/4 inch thick rectangle. (About 15×17 inches)
Now cut out the donut bars using a pizza cutter and place them on a baking sheet dusted with flour. Then let them rise for about 30 more minutes.
Fry the donuts
Pour about 2 inches of corn or vegetable oil in a heavy-bottomed pot and let the oil come to 360-375 degrees Fahrenheit. Now fry each side of the donut for a few minutes per side or until golden brown.
Transfer to a baking sheet lined with paper towels to absorb any extra oil. Let them cool completely.
Try this frosting recipe!
1/3 c butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
4-6 tablespoons hot water
4 ounces semi sweet chocolate chips
Combine over double boiler until fully melted.
