Meat Chopper:
Crockpot:
Ingredients
1 cup chopped onions
1/2 cup chopped red peppers
1/2 cup chopped green peppers
3 garlic cloves Minced
1 pound ground beef or ground turkey
2 cups elbow macaroni
15 oz fire roasted tomatoes
15 oz canned black beans Drained. You can use any canned beans you like.
15 oz canned chili beans Drained.
1 cup beef broth
1 cup shredded cheddar cheese I use sharp.
1 cup shredded Monterey jack cheese
Homemade Chili Seasoning
1 tablespoon chili powder
1 teaspoon cumin
1 teaspoon oregano Dried or ground.
1 teaspoon cayenne pepper Optional for spicy. Adjust to taste.
salt and pepper to taste
Instructions
Heat a skillet on medium-high heat.
Add the ground beef and the chili seasoning. Break down the ground beef with a meat chopper.
Stir and cook until the beef is no longer pink. Drain any excess fat from the beef if necessary.
Add in the red peppers, green peppers, onions, and garlic. Cook until the vegetables are soft.
Add the cooked beef and vegetables to the slow cooker along with the remaining ingredients (with the exception of the cheese).
Cook on Low for 3 to 3 1/2 hours or on High for 1 1/2 to 2 hours. Check in periodically. It has finished cooking when the pasta is soft.
About 10-15 minutes prior to serving, add the cheese to the cooker. Sprinkle it throughout the top.
Allow 10-15 minutes for the cheese to melt.
Cool before serving.

IMPORTANT NOTES:
- Do not heat the sauce separately before adding to pasta, this can cause it to separate. For best results, strain the cooked pasta, let sit for 2-3 minutes (so it isn't extremely hot when adding to the sauce), then add the desired amount of sauce to the warm pasta.
- The sauce will thicken up in the fridge, but when you add to warm pasta it will melt and combine easily (similar to those sauces that come with Velveeta Shells and Cheese).
- IF the sauce separates when you add to the pasta, remove from heat and let it sit for ~5 minutes. Then, stir the pasta continually and the sauce will re-constitute. The separating issue typically is caused by excess heat but is resolved once it cools down a bit and is stirred.

450g 2% Cottage Cheese (one entire 16oz container)
80g 2% cheddar (or cheddar of choice)
20g Parmigianno Reggiano
30g Cheddar Powder (buy in bulk on Amazon or use packets found in boxed Mac n Cheese)
150g 1% milk
Salt/Pepper to taste
Per Serving* (makes 4)
210 Cals
25g Protein
9g Carbs
10g Fat
*A serving makes enough for 4oz of pasta. The entire recipe makes enough for 1 pound of pasta.

For the chili, you'll need olive oil, garlic, onion, ground beef, cumin, frozen corn, zucchini, and a can of diced tomatoes. Serve that over some rigatoni, top it off with grated cheddar cheese, and let dinnertime begin!
