How To make Macaroon Jam Slices
1 1/2 c Ground walnuts
2/3 c Sugar
1 Egg white; slightly beaten

12 oz Apricot jam
(or raspberry jam Preheat oven to 350. With a pastry brush or paper towel, lightly butter a 14-by-17-inch baking sheet. Sprinkle some flour over it, tip the sheet from side to side to cover the surface evenly, then knock off the excess by inverting the sheet and striking it against the edge of a table. In a large mixing bowl, combine the ground walnuts and sugar. Add half slightly beaten white of 1 egg white, and stir until the mixture forma a paste thick enough to be kneaded with the hand. Add a little of the 2nd egg white if the mixture seems too dry. Shape the paste into roll about 3/4-inch in diameter and 10-inches long. With the index finger make a
channel about 1/2-inch at each end of the roll. Lift the rolls with a large metal spatula, and place them, several inches apart, on the baking sheet. Bake them in the middle of the oven for 15 or 20 minutes, or until they are lightly browned. Meanwhile, heat the jam in a saucepan until it runs easily off the spoon. Remove the rolls from the oven and fill the channels with the hot jam. Let them cool. To serve, cut the rolls into slices 3/4-inch thick. -----

This video is about how to make macarons at home.
Such a delicious treat which is a melt in mouth macaroons. The macaroons are crispy on the outside and they have cashews all over them so tasty. Macaroons are crispy light airy sweet treat which just melts in your mouth. They are a combination of egg whites and sugar. Thoothukudi macaroons has a addition of cashews which makes it so tasty. I tried to make macaroons few weeks back, and it was a success in the first try itself. Super easy to make. You have to keep in mind few things when making macaroons.
Ingredients :
1/2 cup sugar,
1/2 cup cashew,
egg whites - 3 eggs
FOR PERFECT MACAROONS EVERYTIME, FOLLOW THESE INSTRUCTIONS.
1)The bowl and beater used to beat egg whites should be clean and dry.
2)Use room temp eggs for this recipe.
3)Use fine sugar like caster sugar or blend the sugar in blender to a fine mix before using.
4)Blend the egg whites without any sugar for 2 mins till it is airy and frothy. Then start adding sugar.
5)Add sugar spoonful at a time and keep blending.
6)Blend till all the sugar is well mixed and it is dissolved.
7)The mix should be very thick and stiff and shiny.
8)You can add powdered cashews or almonds in this.
9)Once you put the tray in oven, never ever open the oven door.
10)Put the macaroons in the middle rack
11)Once the macaroons are baked, let it stay in the oven for 3 to 4 hours so it will get crispy.
12)Store in a air tight container for upto a week.
measurements used :
1 cup = 240ml
1/2 cup = 120ml
1/4 cup = 60ml
1 teaspoon = 5g
1 tablespoon = 15g

Scottish Macaroon Bars - NO BAKE recipe!
These traditional Scottish chocolate & toasted coconut covered sweet delights are so quick and easy to make and require absolutely no baking! You would never ever guess that they are made from potatoes!

Ingredients:
4 oz potato
16 oz icing (powdered) sugar
Milk or dark chocolate (around 200g)
150g coconut
Boil the unpeeled potato in water (no salt!) and then peel and cut into cubes. Mash really well or use a food processor to get a smooth creamy consistency with no lumps. Allow to cool completely then add the sugar around half a cup at a time. Once all of the sugar is added the mixture should be very stiff. Pour the mixture onto a baking sheet lined with parchment paper and smooth out to the corners. Place in the freezer to set for at least 4 hours or overnight.
Once set, split your coconut into two and spread one half onto a baking sheet and put it into the oven to toast for about 5 minutes until golden. Melt the chocolate in the microwave in 10 second bursts (don't let it get to hot) and cut the potato mixture into squares. Dip the squares into the chocolate and then immediately into the coconut and roll until evenly covered on all sides. Transfer onto baking parchment and place in the fridge to set.

Coconut Macaroon Recipe | How to make a perfect Coconut Macaroon
Crunchy outside, soft inside, so yummy, so delicious to nibble at tea time.
In a bowl, put the egg whites, and the caster sugar and place in a bain-marie (water-bath )
Whisk regularly until the sugar is melted and the mixture is creamy.
Pour the grated coconut, then mix again.
Remove from the heat and add the butter.
Cover the mixture with cling film and put it in the fridge for at least 12 hours ( or overnight).
Preheat the oven to 200° C. Put a sheet of baking paper on a baking sheet.
Using a teaspoon, shape small pyramids of macaroon as shown on the video
Bake for 10 min. Let cool and enjoy.

225 g caster sugar

10 g dulce de leche or apricot jam
10 g butter.
