Chicken pieces coated with yogurt marination, cooked to perfection in an oven
MALAI CHICKEN TIKKA
Ingredients
250 grams boneless chicken breasts, cut into 1 inch pieces
¼ cup hung yogurt
4 tablespoons fresh cream
½ cup grated processed cheese
½ teaspoon green chilli paste
½ tablespoon lemon juice
White pepper powder to taste
¼ teaspoon green cardamom powder
Salt to taste
¼ teaspoon nutmeg (jaiphal) powder
1 tablespoon ginger-garlic paste
½ teaspoon garam masala powder
1 green chilli, finely chopped
Butter for greasing
Lemon wedges for serving
Onion rings for serving
Green chutney for serving
Method
1. Mix together yogurt, cream, green chilli paste, lemon juice, pepper powder, cardamom powder, salt, nutmeg powder, ginger-garlic paste, garam masala powder, green chillies and cheese in a bowl.
2. Add chicken pieces and mix well. Refrigerate to marinate for 1-2 hours.
3. Preheat oven to 180̊ C. Line a baking tray with aluminium sheet and grease with some butter.
4. Skewer the marinated chicken pieces onto satay sticks and place them on a baking tray. Put the tray in the preheated oven and bake for 12-15 minutes.
5. Serve hot with lemon wedges, onion rings and green chutney.

Recipe in English:
Ingredients:
-Simply sufi breast fillets ½ kg
-Safed mirch powder (White pepper powder) 1 tsp
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Cream 1 tbs
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) ½ tsp or to taste
-Hari mirch (Green chili) crushed 1 tbs
-Kacha papita (Raw papaya) paste 2 tbs or Meat tenderizer 1 tbs
-Dahi (Yogurt) 2 tbs
-Lemon juice 2 tbs
-Kashkhash (Poppy seeds) soaked 1 tbs
-Kaju (Cashew nuts) soaked 10-12
-Pani (Water) 1-2 tbs
-Sufi cooking oil 1-2 tbs
-Sufi cooking oil 1 tbs
-Shimla mirch (Capsicum) cubes ½ Cup
-Pyaz (Onion) cubes ½ Cup
-Koyla (Charcoal) for smoke
For Gravy:
-Sufi cooking oil 3 tbs
-Makhan (Butter) 1 & ½ tbs
-Laung (Cloves) 2
-Hari elaichi (Green cardamom) 3
-Pyaz (Onion) grinded 1 large
-Adrak (Ginger) grated ½ tbs
-Hari mirch (Green chili) crushed 1 tbs
-Safed mirch powder (White pepper powder) ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 tsp
-Namak (Salt) ½ tsp or to taste
-Dahi (Yogurt) whisked ¾ Cup
-Doodh (Milk) ½ Cup as required
-Cream 2 tbs
-Kasoori methi (Dried fenugreek leaves) ½ tsp
Directions:
-Cut chicken fillets into cubes.
-In bowl,add chicken boneless cubes,white pepper powder,ginger garlic paste,cream,cumin seeds,salt green chilies,raw papaya paste,yogurt,lemon juice,mix well and marinate for 2 hours.
-In blender,add cashew nuts,poppy seeds,water and blend well & set aside.
-In grill pan,add sufi cooking oil and marinated chicken,grill until done & set aside.
-In the same grill pan,add sufi cooking oil,capsicum,onion and grill for 1 minute & set aside.
-Give a charcoal smoke for 2 minutes & set aside.
-In wok,add sufi cooking oil,butter and let it melt.
-Add cloves,green cardamom and mix.
-Add grinded onion,mix well and cook for 4-5 minutes.
-Add ginger,green chilies,cashew+poppy seeds paste,mix well and cook for 2-3 minutes.
-Add white pepper powder,black pepper powder,cumin seeds,salt and mix well.
-Add yogurt and mix well for 2-3 minutes.
-Add milk and mix well.
-Add cream and mix well.
-Now add grilled chicken & vegetables and mix well.
-Add dried fenugreek leaves,cover and let it simmer for 2 minutes.
-Add butter & serve!

-Chicken fillets ko cubes mein cut ker lein.
-Bowl mein chicken boneless cubes,safed mirch powder,adrak lehsan paste,cream,zeera,namak,hari mirch,kacha papita paste,dahi aur lemon juice dal ker ache tarhan mix karein aur 2 hours kliya marinate ker lein.
-Blender mein kaju,kashkhash aur pani dal ker ache tarhan blend karein & side per rakh dein.
-Grill pan mein sufi cooking oil aur marinated chicken dal ker pak janay tak grill ker lein & side per rakh dein.
-Us he grill pan mein sufi cooking oil,shimla mirch aur pyaz dal ker 1 minute kliya grill karein & side per rakh dein.
-2 minutes kliya koyla ka dhuwan dein & side per rakh dein.
-Karhai meinsufi cooking oil aur makhan dal ker melt ker lein.
-Laung aur hari elaichi dal ker mix karein.
-Grinded pyaz dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.
-Adrak,hari mirch,kaju+kashkhash paste dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Safed mirch powder,kali mirch powder,zeera aur namak dal ker ache tarhan mix karein.
-Dahi shamil karein aur 2-3 minutes kliya ache tarhan mix ker lein.
-Doodh shamil karein aur ache tarhan mix karein.
-Cream dal ker ache tarhan mix ker lein.
-Ab grilled chicken & vegetables shamil karein aur ache tarhan mix ker lein.
-Kasuri meethi dal ker dhak dein aur 2 minutes kliya dum per rakh dein.
-Makhan dal ker serve karein.
KASURI MURGH MALAI | KASURI METHI MALAI CHICKEN | MURGH METHI MALAI
Kasuri Murgh Malai | Kasuri Methi Malai Chicken | Murgh Methi Malai | Kasuri Malai Murgh | Kasuri Methi Chicken Recipe | Methi Malai Chicken | Chicken Curry | Chicken Gravy
Ingredients for Kasuri Murgh Malai:
- Chicken with bones, curry cut pieces- 500 gms
For Marination:
- Salt- 1 tsp
- Turmeric Powder- 1/2 tsp
- Crushed Pepper- 1/2 tsp
- Ginger Garlic paste- 2 tsp
- Green Chillies, chopped- 2
- Kasuri Methi- 1 tbsp (not roasted)
- Whisked Curd/ Yogurt (watery)- 8 tbsp (5 tbsp whisked curd+ 3 tbsp water)
Whole Spices:
- Green Cardamom- 3
- Cloves- 3
- Cinnamon- 2 pcs
- Black Cardamom- 1
Spice Powders:
- Red Chilli Powder- 1 tsp
- Coriander Powder- 1.5 tsp
- Garam Masala Powder- 3/4 tsp
Other Ingredients:
- Onions, finely chopped- 2 medium (150 gms)
- Tomato Purée/Paste , readymade- 4 tbsp (1 medium- 75 gms red tomato blended, if readymade not available)
- Cashew paste- 9-10 cashews nuts
- Fresh Cream- 3 tbsp
- Kasuri Methi ( Fenugreek leaves)- 1 tbsp (dry roasted & crushed with your hand)
- Refined Oil- 3 tbsp
- Salt to season- 1/4 tsp
Preparation:
- Whisk the curd/yogurt and if thick, add 3 tbsp water to make it little thin.
- Chop the green chillies.
- Marinate the chicken with items specified, mix well and set aside for 60 mins on room temperature.
- Before starting to cook, fine chop the onions and if not using readymade tomato purée/paste, blend 1 medium sized red tomato into a paste.
- Also make a paste of the cashew nuts. To make the paste, add the cashews into a grinder and coarse grind into a powder. Now add 2 tbsp water and blend it again into a smooth paste.
- For the Kasuri Methi that will be used as garnish, dry roast it on low heat for 30 secs and then crush it with your hand.
Process:
- Heat oil in a pan or kadai and add the whole spices. Once it splutters, add the chopped onions and fry on medium heat for 8-10 mins till light brown.
- Now add the tomato paste and fry on medium heat for 2 mins.
- Add the marinated chicken & cook on medium heat for 4-5 mins.
- Add all the spice powders, mix & fry on medium heat for 2 mins.
- Add in the cashew nut paste, mix and cook on low heat for 2-3 mins till oil separates. Also season with salt to taste.
- Now add 200 ml water, mix and cover & cook on low heat for 15 mins till chicken is tender.
- Remove the lid, add the cream, mix and simmer on low heat for 2-3 mins. Add little water if required.
- Garnish with Kasuri Methi, mix and simmer for another 2-3 mins. Serve hot.

MALAI CHICKEN RECIPE
Preparation time: 10 minutes
Cooking time: 30 minutes
Serves: 4
Ingredients
3 tbsp Ghee
2 black Cardamom
1 Green cardamom
1/2 tsp Cumin seeds
1 kg Chicken, curry cut
Salt to taste
1 tbsp Ginger, chopped
1/2 tbsp Coriander powder
2 1/2 cup milk
3 tbsp Almond paste
1 tbsp black pepper powder
1/4 tsp Kasuri methi
1/4 tsp Cardamom powder
1 tbsp Cream
For tempering
1 tbsp Ghee
1 tsp Degi mirch
Process
● In a large kadai, add ghee once its hot add black cardamom, green cardamom and cumin seeds mix well.
● Add chicken and salt to taste sauté well.
● Add ginger, coriander powder and sauté until the chicken is tender.
● Add milk, almond paste and cook till the chicken is soft.
● Once the chicken is done, Add black pepper powder and kasuri methi and cream.
For tempering
● In a pan, add ghee and degi mirch.
● Garnish with coriander sprig.
● Serve hot.
