Ingredients:
Prepare Tawa Malai Chicken Spice Mix:
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Sabut dhania (Coriander seeds) roasted & crushed 1 & ½ tbs
-Kali mirch powder (Black pepper powder) ½ tbs
-Chicken powder 2 tsp
-Kasuri methi (Dried fenugreek leaves) 1 & ½ tbs
-Javitri powder (Mace powder) ¼ tsp
-Garam masala powder 1 tsp
-Namak (Salt) 1 tsp or to taste
-Jaifil powder (Nutmeg powder) ¼ tsp
-Dahi (Yogurt) 350g
-Cream 150ml
-Baisan (Gram flour) ½ tbs
-Hot sauce 2 tbs
-Chicken mix boti 1 kg
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Soy sauce 2 tbs
-Cooking oil 4-5 tbs
-Lehsan (Garlic) sliced 2-3 cloves
-Hari mirch (Green chillies) sliced
-Hara dhania (Fresh coriander) chopped
-Lemon slices
Directions:
Prepare Tawa Malai Chicken Spice Mix:
-In a bowl,add cumin seeds,coriander seeds,black pepper powder,chicken powder,dried fenugreek leaves,mace powder,garam masala powder,salt,nutmeg powder & mix well.Tawa malai chicken spice mix is ready!
-It can be stored for up to 3 months in airtight jar.
-In a jug,add yogurt,cream,gram flour,hot sauce,prepared tawa malai spice mix (reserve 2 tbs of prepared spice mix for later use),whisk until well combined & set aside.
-In a bowl,add chicken,reserved spice mix,ginger garlic paste,soy sauce,half quantity of prepared marinade & mix well.
-On a heated griddle,add cooking oil,garlic & mix well.
-Add marinated chicken,cover & cook on medium flame for 4-5 minutes.
-Turn sides,add reserved marinade,green chillies,fresh coriander,lemon slices,cover & cook on low flame for 10-15 minutes.
-Turn sides,add reserved marinade,green chillies,fresh coriander,cover & cook on low flame for 2-3 minutes.
-Garnish with lemon wedges,fresh coriander & serve!

-Bowl mein zeera,sabut dhania,kali mirch powder,chicken powder,kasuri methi,javitri powder,garam masala powder,namak & jaifil powder dal ker ache tarhan mix ker lein.Tawa malai chicken spice mix tayyar hai.
-Airtight jar mein dal ker 3 months kliya store ker saktay han.
-Jug mein dahi,cream,baisan,hot sauce & tayyar tawa malai chicken spice mix (reserve 2 tbs of prepared spice mix for later use) dal ker ache tarhan whisk ker lein & side per rakh dein.
-Bowl mein chicken,tayyar spioce mix,adrak lehsan paste,soy sauce aur tayyar marinade ki half quantity dal ker ache tarhan mix ker lein.
-Garam tawa per cooking oil aur lehsan dal ker ache tarhan mix ker lein.
-Marinated chicken dal ker dhak dein aur darmiyani ancch per 4-5 minutes kliya paka lein.
-Sides turn karein aur reserved marinade,hari mirchein,hara dhania aur lemon slices dal ker dhak
dein aur halki ancch per 10-15 minutes kliya paka lein.
-Sides turn karein aur reserved marinade,hari mirchein aur hara dhania dal ker dhak dein aur halki ancch per 2-3 minutes kliya paka lein.
-Lemon wedges aur hara dhania dal ker serve karein!

Preparation of Marinade
500 gms Chicken Thigh (boneless)
1/2 cup Curd (whisked)
1 tbsp Ginger, Garlic & Green Chilli Paste
1 tsp Dried Fenugreek Leaves
1 tsp Garam Masala Powder
1/2 tsp Turmeric Powder
1/2 tsp Red Chilli Powder
2 tsp Lemon Juice
Salt (as required)
For Curry Paste
1/4 cup Onion (diced)
1/4 cup Cashew Nuts
Cooking the Curry
1 tbsp Oil
2 Bay Leaves

About Chicken Curry
Chicken curry is a dish originating from the Indian subcontinent. It is common in the Indian subcontinent, Southeast Asia, Great Britain, and the Caribbean. A typical curry from the Indian subcontinent consists of chicken stewed in an onion- and tomato-based sauce, flavoured with ginger, garlic, tomato puree, chilli peppers, and a variety of spices, often including turmeric, cumin, coriander, cinnamon, and cardamom. Outside of South Asia, chicken curry is often made with a pre-made spice mixture known as curry powder.
Indian cuisine has a large amount of regional variation, with many variations on the basic chicken curry recipe. Indian chicken curry typically starts with whole spices, heated in oil. A sauce is then made with onions, ginger, garlic, tomatoes, and powdered spices. Bone-in pieces of chicken are then added to the sauce and simmered until cooked through. In south India, coconut and curry leaves are also common ingredients. Chicken curry is usually garnished with coriander leaves and served with rice or roti. In south India, chicken curry may be thickened using coconut milk.

Ingredients for Methi Chicken:
- Chicken, small curry cut pieces with bones -500 gm
Marinate chicken with:
- Salt- 1 tsp
- Turmeric powder-1/2 tsp
- Red Chilli Powder- 1 tsp
Onion-tomato-chilli paste-
- Onion, medium sized sliced & lightly fried- 2 medium
- Tomato- 2 small
- Green chillies- 2 small
- Curd/yogurt- 2 tbsp
- Cashew nut paste- 12 cashews
- Ginger garlic paste- 2 tsp
- Methi/Fenugreek leaves- 2 cups, approx 50 gms leaves picked (To be pan fried & set aside)
- Turmeric powder- 1/4 tsp
- Red Chilli powder- 1/2 tsp
- Coriander powder- 1 tsp
- Cumin powder- 1/2 tsp
- Garam masala powder- 1/2 tsp
- Oil- 1 tbsp for frying onions/methi leaves & 3 tbsp
- Salt for seasoning
Preparation:
- Wash, drain & marinate the chicken with salt, turmeric powder and red chilli powder. Set aside for 30 mins.
- Pick the Methi/Fenugreek leaves (about 2 cups or 50 gms leaves), wash few times and drain the water.
- Slice the onions, cut the tomatoes into quarters and the green chillies to halves.
- Make a paste of the cashew nuts.
- Take a pan, heat a tablespoon of oil and add the onions. Fry on medium heat for 3-4 mins till translucent. Take out, drain the oil well and set aside to cool.
- In the oil left off in the pan, add the washed and drained Methi leaves and fry on medium heat till the Methi is cooked but still retains some colour.
- To make the onion-tomato-chilli paste, take a blender and add the lightly fried onion, quartered tomatoes, green chillies and 2 tbsp of yogurt. Blend to a rough paste.
Process:
- Heat oil in a pan or kadai and add the ginger garlic paste. Fry on low heat for 2 mins.
- Add the tomato-onion-chilli paste, mix and fry on medium heat for 2-3 mins till oil separates.
- Reduce the heat to low and add all the spice powders other than garam masala powder. Mix well and cook for 5 mins on low heat till oil separates.
- Now add the marinated chicken, mix everything well and fry on high heat for 2-3 mins.
- Add the garam masala powder, mix and fry/bhuno on medium heat for around 10 mins.
- Add the cashew paste and the fried Methi leaves and mix everything well. Cook on low heat for around 5 mins till oil separates.
- Add 1/2 cup water, mix well and cook covered on low heat for around 15 mins.
- Serve hot with roti or rice
