Tajin Salt
* 1 teaspoon Tajin
* 1 tablespoon coarse sea salt
Spicy Grapefruit
* 1.5 ounces silver tequila
* 1/2 lime juiced
* 6 ounces grapefruit juice
* 1 teaspoon agave nectar
* 1 small or 1/2 large jalapeño sliced
* Garnish with lime wedges pieces of grapefruit, and more jalapeño

Spicy Grapefruit and Sweet Basil Margarita:
1 basil leaf
1/4 teaspoon jalapeno, seeded and finely diced
1/2 grapefruit, juiced (about 2 ounces)
2 ounces silver tequila
1 teaspoon agave
Ice
1 splash seltzer
1.In a glass muddle basil and jalapeno until flavors combine. Add grapefruit juice, tequila and agave and stir to combine. Fill glass with ice and top cocktail with seltzer. Garnish with a piece of grapefruit.
Makes 1 cocktail
Gluten-Free Waffles with Salted Maple and Bacon:
1 cup Alex's whole grain gluten-free flour, (recipe below)
1 tablespoon ground flax seeds
1 teaspoon ground cinnamon
1 1/2 teaspoons baking powder
Pinch of salt
1 1/4 cup buttermilk
2 ounces butter, melted
2 eggs
3 tablespoons maple syrup
1 teaspoon extra virgin olive oil
3 slices bacon
3/4 cup maple syrup
1 teaspoon sea salt
Cooking spray
1.In a large bowl mix together the flour, flax seeds, cinnamon baking powder, and salt. In a separate bowl, whisk together the buttermilk, butter, eggs and maple syrup. Add the wet ingredients to the dry ingredients and mix to combine.
2.Have a waffle iron preheated and greased. Ladle batter into waffle iron and cook 6-8 minutes until waffles are golden brown.
3.In a medium skillet heat extra virgin olive oil. Add bacon and cook until crisp. Allow to cool and then crumble into pieces.
4.Heat the maple syrup and salt in a small saucepot. Remove from heat when salt is completely dissolved.
5.To assemble place waffles on a plate, drizzle with salted maple syrup, and sprinkle bacon overtop.
Makes: 6-8 waffles
Alex's whole grain gluten-free flour:
2 cups brown rice flour
1 cup plus 2 tablespoons almond flour
1/2 cup plus 2 tablespoons sweet rice flour
1/2 cup plus 2 tablespoons potato starch
1.Combine ingredients together. Store in an airtight container.
Yield: 4 1/4 cups

Jose Cuervo: Spicy Grapefruit Margarita
INGREDIENTS
11⁄2 parts Jose Cuervo Tradicional® Reposado
1 part fresh lime juice
1 tsp agave syrup
1 thinly sliced jalapeño round
2 parts grapefruit juice
3 pinches kosher salt
1 pinch chili powder
Lime wedges
Small grapefruit wedges for garnish, optional
PREPARATION
In shaker, add ice, Jose Cuervo Tradicional® Reposado, grapefruit juice, agave syrup, fresh lime juice and jalapeno rounds. Shake well. On small plate, mix salt and chili powder. Run lime wedge around the rim of glass then dip the glass into salt and pepper mixture. Add ice to glass and pour in contents of the strainer. Enjoy!
