Marilyn's Poor Man's Cake | Vegan
An eggless, milkless cake, also known as Depression Cake, for those times when you don't have any eggs or milk, but would like a slice of cake. Best with coffee and a dusting of powdered sugar.
Marilyn's Poor Man's Cake
½ cup, 113 grams, margarine
1 cup, 230 grams, white sugar
1 teaspoon, 5ml, vanilla extract
1 cup,237ml, dried fruit such as: chopped dates, raisins, craisins
1 teaspoon cinnamon
1 cup, 237ml, cold strong coffee
2 cups, 240 grams, flour
1 teaspoon baking soda
dash of salt
Preheat oven to 350°F, 180°C, gas mark 4. Boil margarine, sugar, vanilla, cinnamon, dates and coffee in a small saucepan for 5 minutes. Cool to room temperature. Mix the dry ingredients in until combined. Spread the batter in an 11x15 inch jellyroll pan that has been sprayed with nonstick cooking spray and covered with parchment paper.
Bake cake for 20 minutes. Cool in pan for 10-20 minutes. Turn out on a cutting board and slice into 12 pieces. Dust with powdered sugar if desired.
