Cut up some onions and peppers. Cook them in a big pot until soft. Dump in canned crushed or puréed tomatoes and undrained canned beans — roughly equal quantities is a good starting point, though I like extra tomato. Dump in a lot of spices until you like how it tastes — cumin + smoked paprika + oregano + garlic powder is a good basic blend. Simmer for about a half hour. If you want to be fancy, melt in a little dark chocolate. Eat and go do something else with your life.
Hopkins County Stew - History and Recipe

I am so excited to be sharing my recipe for Hopkins County stew! This stuff is good. Additionally, it is fast, healthy and can easily serve a hungry crowd. Since it is a one-pot meal, it offers quick kitchen clean-up.
Hopkins County stew is traditionally served with Saltine crackers and cheddar cheese (slices or sticks).
The recipe below is my kitchen recipe. My over-the-open-fire, washpot recipe starts with 40 ozs of water, 20 lbs. of potatoes, and 25 lbs of chicken just to give you an idea of the size of the pot!
Hopkins County Stew
1 32 oz box of chicken broth, I like the low sodium version **
4 medium russet potatoes, peeled and cut into 1 inch pieces
1 medium yellow onion, peeled and diced
1 rotisserie chicken, deboned and cut or torn into 1 inch pieces **
1 14.8 oz can diced tomatoes (or Rotel tomatoes if you want some heat)
1 14.8 oz can tomato sauce
1 15 oz can cream style corn
1 15 oz can whole corn, drained
In a 6 qt pot, add potatoes, onions, and enough broth to cover (I usually use the full box). Bring to a boil and continue to boil until the potatoes are tender. Add the diced tomato and tomato sauce.
This is when I add my seasonings. I start with:
1 tsp Lawry’s Seasoned Salt
1 tsp pepper
1 tsp paprika
1 tsp chili powder (I prefer Mexene)
Bring to a boil.
Then add the can of cream style corn and whole corn. Heat through being careful not to burn the stew now that the corn has been added.
Taste to see what additions you want to add. Below is a pretty exhaustive list of options. Some are commonly found in H.C. stew (such as garlic powder) and some are random (like curry powder).
For the pot I made for the video, the amounts are in parentheses – if there are no parentheses next to the ingredient, I did not use it this time.
Garlic powder (1 tsp.)
Nature’s Seasoning (1 tsp.)
Poultry seasoning (1 tsp.)
Cumin
Marjoram
Celery salt
Sea salt
Chicken bouillon (2 cubes or equivalent)
Can of green chilis
Ketchup
Tomato paste
Sugar
Butter
Bacon fat
** If you want to boil a chicken, then use the broth instead of a box of chicken.
