Happy Monday! Wait, is a Happy Monday a thing? Lol anyway, today's recipe is one I am making specifically for my wife. I love a good meat lover's pizza, but my wife loves veggie pizzas, and that exactly what we are making. This Mediterranean Pizza is the perfect thing the veggie loves in the house. Heck, not just the veggie lover this pizza is so freakin' good everyone will destroy this Mediterranean Pizza. Total Time: 35 Minutes
Makes: 4 Servings
2 Cups Onions, Sliced
1 Cup Baby Spinach, Chopped
3/4 Cup Fire Roasted Red Peppers, Chopped
3/4 Cup Marinated Artichoke Hearts, Chopped
1/2 Cup Olives
1 Tbsp. Balsamic Vinegar
1 tsp. Garlic Powder
1/2 tsp. Oregano
1/2 tsp. Crushed Red Pepper
1 Refrigerated Pizza Crust
1 Cup Pizza Sauce
1 Cup Feta Cheese

~ Recipe ~
█ Naan Style Pizza Dough █
• 2.5 cups bread flour (reserve ¼ to ½ cup for dusting)
• ½ cup Siggi’s 0% plain skyr
• 1 cup warm water
• 1 TBSP yeast
• Olive oil for cooking (about 2 TSP per naan)
Mix the warm water, skyr and yeast in a measuring cup or bowl. Let the yeast bloom for 5 minutes until there are visible bubbles on top.
In a mixing bowl, add 1.25 cups of flour to the water, skyr, and yeast. Stir until a very sticky mass forms. Gradually add the remaining .75-1 cup of flour until a shaggy dough ball forms.
Knead the dough in the bowl until it pulls away from the side. Cover and let rest until the dough doubles in size (around 90 minutes).
Turn dough onto a floured counter and knead 10-15 times. Cut the dough into 8 rounds. Roll out each round until it is very thin, about 1/8 inch thick. Drizzle 1 TSP of olive on one side.
TO ASSEMBLE AND COOK PIZZA:
Put the olive oil side down in a ripping hot pan (medium high heat) and cover for 1 minute until bubbles form. Turn the heat down to low. Drizzle 1 TSP olive oil on the other side and flip.
Add the toppings below and throw into the broiler on high for 2-3 minutes until cheese is melted and bubbly.
█ Toppings & Sauce █
Sauce:
• 1/4 cup Siggi’s 0% plain skyr
• 1 TSP of Harissa
Mix Siggi’s and Harissa in a bowl until combined.
Protein:
• ½ pound Ground Bison (Or any other protein)
• Salt & Pepper to Taste
• 2 TSP spice mix (1 TBSP Cumin, 1 TSP Smoked Paprika, ½ TSP Cloves, ½ TSP Cinnamon)
Mix bison and spice mix, and brown the meat in a medium heat pan.
Other Toppings:
• ¼ cup sliced Onions
• ½ cup Mozzarella
• 1 TBSP Fresh Dill (sprinkle on after done cooking)

Mediterranean Pizza, Lebanese Pizza
A very unusual pizza made with Pita bread as its base, the Mediterranean Pizza replaces pizza sauce with a luscious and pungent chilli garlic hummus. The strong flavour of garlic and the earthy flavour of kabuli chana act as a wonderful base for typical pizza toppings like olives, capsicum, onions and cottage cheese. A dash of herbs, common seasonings like chilli flakes, and of course a garnish of cheese before baking complete the pizza effect. An innovative and off-beat treat that you are sure to love, the Mediterranean Pizza will also earn you your guests’ applause! Try other Lebanese recipes like Orange Sesame Tabbouleh and Fattoush .
Preparation Time: 15 minutes.
Cooking Time: Nil.
Makes 2 pizzas.
Baking Temperature: 200°C (400°F).
Baking Time: 20 minutes.
For the chilli garlic hummus
½ cup soaked and boiled kabuli chana (white chick peas)
2 tbsp curds (dahi)
1 tbsp olive oil
2 tsp chilli garlic paste
Salt to taste
Other ingredients
2 pita bread
¼ cup sliced capsicum (red, yellow, green)
¼ cup sliced onions
2 tbsp grated paneer (cottage cheese)
4 tbsp grated processed cheese
10 sliced black olives
Dry red chilli flakes for sprinkling
Dried oregano for sprinkling
For the chilli garlic hummus
Combine all the ingredients in a mixer along with ¼ cup of water and blend till smooth. Keep aside.
How to proceed
1. Place 2 pita breads on a clean, dry surface, spread half of the hummus on each pita bread.
2. Put half the coloured capsicum, half the onions and sprinkle little chilli flakes and oregano evenly over each pita bread.
3. Put 1 tbsp of paneer, 2 tbsp of cheese, and 5 olives and finally sprinkle chilli flakes and oregano evenly over each pita bread.
4. Bake them in a pre-heated oven at 200°c (400°f) for 15 minutes.
5. Cut into small pieces and serve immediately.
