Mediterranean Tuna Salad Recipe
Here’s a quick recipe for Mediterranean Tuna Salad I made as a meal prep request. I never thought of incorporating Mediterranean flavors into tuna salad but it came out really great! I basically just added what I would to a Greek salad minus the olives.
Drain tuna cans really well
Add diced tomatoes, red onion, diced cucumber, diced bell peppers & crumbled feta cheese. Add some Italian dressing, the dressing of your choice or just some freshly squeezed lemon juice & a drizzle of olive oil. Toss & serve.

Ingredients:
2 tbsp lemon juice
3 tbsp extra-virgin olive oil
¼ tsp salt, or to taste
1 lb radishes (red and white), thinly sliced
2 tbsp parsley leaves, fresh and chopped
3 pcs scallions, white and green parts, chopped
6 pcs black olives,large, pitted, and coarsely chopped
6 oz tuna, drained and coarsely mashed with a fork
1 medium head romaine lettuce, washed, dried, and torn into bite-size pieces
2 to 3 pcs lemon wedges

0:33 Whisk together the lemon juice, olive oil, and salt in a small bowl.
0:43 Combine the radishes, parsley, scallions, olives, and tuna in a medium-sized bowl.
0:52 Pour the dressing over the salad and toss to coat.
0:57 Assemble the lettuce in a bowl and top it with the tuna salad. Garnish with lemon wedges and serve!
