Betty's Mexican Appetizer (for Nacho Lovers!)
Betty demonstrates how to make a scrumptious Mexican Appetizer. This is a hot dip that you may dip into, or you may serve in tortilla dippers on a plate.
Mexican Appetizer
1 bag tortilla dippers
1 pound hamburger
14.5-ounce can diced tomatoes, drained
½ package Chili-O (or use ½ tablespoon of homemade Taco Seasoning from Betty's Kitchen)
1 bunch green onions, cleaned and chopped
½ to 1 pound shredded sharp Cheddar cheese, as desired
Brown 1 pound hamburger over medium heat, stirring constantly. Drain. Add a 14.5-ounce can diced, drained tomatoes and ½ package Chili-O (or use ½ tablespoon of homemade Taco Seasoning from Betty's Kitchen). Set aside. Chop 1 bunch green onions and set aside. In a 13-inch by 9-inch by 2-inch Pyrex baking dish, spread the chili mixture evenly on the bottom. Sprinkle evenly with chopped green onions, and sprinkle evenly with ½ to 1 pound of shredded sharp Cheddar cheese on top. Bake at 350 degrees (F) about 15 min, until cheese is beginning get brown and crusty. Serve from baking dish with tortilla dippers, or fill dippers with hot, baked mixture and arrange on a nice Mexican-style plate. Enjoy!!! --Betty :)

Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law – Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!

Don’t want to fry them? No problem, brush each empanada with olive oil and bake for 20-22 minutes at 400 degrees
Refrigerate for at least one hour
Ingredients: 20-22 empanadas
Empanada dough
3 3/4 c AP flour
12 tbsp cold butter
1 tbsp sugar
Salt I’m using 1 1/2 tsp
Ground Beef Stuffing:
2 lbs lean ground beef
2 small bell peppers (chopped)
1 Anaheim pepper (chopped)
1 small onion (chopped)
4 minced garlic cloves
2 tsp Mexican oregano
2 tsp thyme
2 tsp parsley
2 tsp basil
2 tsp paprika
1-2 tsp crushed red pepper
1 tsp garlic powder
1 tsp black pepper
Salt I’m using 2 tsp
???? your favorite melting cheese, I’m using medium cheddar, Monterey Jack and Oaxaca cheese

Now when it comes to parties, smoked appetizers are the way to go! Ask my friends and neighbors.... they'll tell you! So when I saw this smoked dip i said I love me some smoked queso, but I think this will be way beyond that... and of course I was right! Now this isn't exactly Elote, or Mexican Street Corn on the Cob... but its pretty amazing!
Here's what you need for this street corn dip recipe:
- 2 cans of Fire Roasted Sweet Corn
- Two 8oz packages of cream cheese
- 8oz Pepper-jack Cheese
- 6oz Cotija cheese
- 1 cup chopped fresh cilantro
- 1 cup sour cream
- 2 cloves garlic
- Tajin seasoning
** Bonus Ingredient (not used in this video but used since...) **
- 8oz shredded taco cheese
Place all of that all pretty into a greased aluminum 9x13in pan and place into the smoker. Stir occasionally until all the cheese is melted and you have a nice warm CREAMY consistency!
Now I don't know about you.... that's one tasty smoked bbq appetizer or pellet grill Mexican Street Corn dip!
