I am not a Chef just a Home Cook. I make simple and easy recipes.
I grew up on garden food and southern home cooking. I will be sharing some recipes that my Momma made and other family recipes and things I made for my family when my kids were growing up. I also look for new things to make online or recipe books and will make it and give it a try.
John 3:16 - For God so loved the world that he gave his one and only Son, that whoever believes in him shall not perish but have eternal life.
If you have a YouTube channel and make any of my recipes especially those I say are family recipes I ask you to tell where you got the recipe from and not pass it off as your own. I always give shoutouts if I try a recipe from another YouTube channel..it is only right to do so.
I DO NOT SUB FOR A SUB SO DO NOT ASK. ANY COMMENTS LIKE THAT WILL BE DELETED AND BLOCKED.

TEX MEX GOULASH | RICHARD IN THE KITCHEN
In this video I show you how to make tex-mex goulash. Southwestern seasoned ground beef mixed with a homemade mildly spiced cheese sauce and elbow macaroni. Garnish with green onion chives, fresh cilantro, slice pickled jalapeno peppers and a dusting of Doritos nacho cheese chips.
Shopping List:
Meat:
Ground Chuck ground beef 80/20
1 tbs. Olive, vegetable or canol oil
1 tsp. minced garlic
1 tsp. kosher salt
1 tsp. ground cumin
1 tsp. corinander
1 tsp. Mexican oregano
1 tbs. chili powder
1 tbs. tomato paste
½ cup water
Sauce:
2 tbs. butter
1 tbs. olive oil
1 small finely diced sweet onion
Pinch of salt
½ cup chicken broth or stock
15 ounces Mexican crema or sour cream
1 ½ cups cheese blend such as 4 blend Mexican cheese
1 4-ounce can of mild green chiles, drained
Pasta:
1 lb. Small elbow macaroni
4 quarts water
1/3 cup kosher salt
Garnish:
Cilantro
Jalapeno slices
Roughly crumbled Nacho cheese Dorito chips
Directions:
Add the tbs. of oil in a skillet over medium high heat and brown the ground beef. When it’s browned, drain off the excess grease, and add the seasonings listed under the “meat” ingredients above along with the tomato paste and ¼ cup of water. Stir well and reduce the heat to medium low and keep warm.
Add the butter and olive oil to a sauce pan over medium heat. When the butter starts to foam up add the diced onion and a pinch of kosker salt. Stir and cook until the onions are extremely soft, but not browned, about 7-10 minutes. When softened, add the chicken stock, Mexican creama (or sour cream), and stir until smooth. Add the cheese and chiles and stir until the cheese is thoroughly melted. Keep warm.
Add the 4 quarts of water to a pot over medium high heat and bring to a rolling boil. Add the 1/3 cup of kosher salt to the water only after it’s at a rolling boil. Add the elbow macaroni and stir for about 45 seconds to prevent sticking then cook 1 minute less than package directions to allow for carry-over cooking when added to the sauce. Drain the macaroni and add it to the cheese sauce followed by the ground beef. Toss well.
Serve and garnish with cilantro, jalapeno slices and the crumpled Dorito chips.
